Shitty dish job 3

Restaurant backline is like a finely tuned orchestra. I spin and duck past someone with dishes stacked to their chin as the man behind me shouts "6 coming in!" There's sauce freshly spilled all over the floor, because somebody fumbled an enchilada - captain and coke does not a steady hand make. My boss yells my name and I look nervously over only to see him smiling with his middle finger held in the air, that's how our team of misfits shows affection.
The ladies of the night are a chosen few, more or less. They perk themselves up but play their game down; adorned in make-up donning shirts that show just enough of their back tattoo. Someone's getting a tip tonight. They know it too - only the girls who make the man at the table second guess his marriage make any money in this industry. The below-average looking waitress is forever butthurt, and her attitude makes her even less likely to please her dining clients.

The more work one does, the smaller the tip. It starts with bartenders and card dealers at casinos. They get tipped massively for no fuckin reason. Then it's waiting staff. They literally walk food and drinks to a table. The mediator between the kitchen slaves and the customer, a pretty face and smile. Next is the deliver driver. Sometimes stiffed despite using his own gas, and he doesn't even get the $2 delivery fee as compensation. After that, it's taxi drivers, tipped less often than their counterparts who just drive food from point a to b. Maids at hotels, rarely tipped even though it's a service job. Down the chain, as the work becomes harder the tips are less frequent. Finally, the trash man at the bottom. It used to be customary to tip them and the now extinct milkman. No more though.

Yea Dishwasher is the shittiest job in a restaurant imo and they get no tips, and shit on constantly.
If there is any bullshit task no one else wants to do, Clogged Toilet?, Gotta run to the freezer? Go scrub the walls and floor? who else to ask than the dishwasher, who is treated like the lowest on the food chain.
But let's see a dishwasher walk out on a friday night and see how valuable he/she all of the sudden becomes.
edit: yes I used to wash dishes

True Most disadvantaged individuals are good at labor like this, or really anyone who just likes being busy. I tend to be ok on the labor, but I don't like the pruny hands and of course shit pay.
if you're in this job you basically just NEEDED a paycheck, as is my case. Trying to keep on the hunt

Most cooks I have worked with were either alcholics or coke heads.
or both.
and 75% of them were bald.
Coincidence?

I worked at a restaurant when I was 18 where the head chef was banking 200k per year. Mostly because it was a golf club, and members of the club voted on wages. That was a chill job even though I was a dishwasher making $8.00 ph.
Only did it for a few months though. I've worked as a dish washer at two other places, as a cook and as a bartender. I was a GM at a fast food joint for a year. And most recently was a dietary aide at a nursing home.
I'm done with restaurant work for the rest of my life though. I'm good on the kitchen, unless I'm cooking for myself. Worked plenty of restaurants to know I'm done with them.
And BigWorm, when I was a cook I was both a coke head and kind of an alcoholic.
Not bald though.

I liked my job when I was doing it, I was working prep and lunch/dinner rush shit. Pretty much 6am-6pm.
Long hours, stressful and lots of action. It was fun, I like to work hard though so I don't mind constantly having to do shit. Had to start out in the dishpit in the beginning though, that shit sucked- cleaning deepfryers and shit everymorning. Worked hard and got put on the line eventually.
Definatly did more work then what I got paid for though, seriously.

It was a nightclub, 800 capacity so a few thousand customers per day.
I was the only night dishwasher for Wed-Sun, and we had one day dishwasher. Lots of tips from the crew, bonus at the end of the year, free drinks, paid lap dances and the like.
Probably should have stayed, could have taken on an easier position, had a good lady out there, worked and lived on the beach ($950 2bdrm San Diego). Left and had some really shitty times

Nah, I did both for years. Dealing with people is easy if not gross, you have to work your hand to the bone in dishpits, doesn't get any easier.

You got the whole clockwise/counterclockwise situation...
You're going this way, you're going that way, a little circle there, another there.
It's both mentally and physically exhausting.

I wash dishes at a high-volume Mexican restaurant (interestingly enough with mostly white coworkers), though I am in the process of learning all the line positions.. Our dishwashers absolutely, without a doubt, have the shittiest job in our restaurant and make the least amount of money. That's why we hire everyone on as a dishwasher first so we dont waste time training people if they can't keep up. I used to like the job just because it was leagues better than the existence I lived prior, but now that I work mostly cooking shifts I have a much harder time motivating myself to wash dishes.
Back problems, carpal tunnel, glass contantly embeeded in the hands, jalapeno juice in the eyes, >100 F temperatures in the summer, constantly soaking wet, getting yelled at by both cooks and FOH employees.. Not much fun at all.
Also I want to disagree with whoever said most of us are drug addicts... But most of us are drug addicts. At least when the imaginary line between alcoholics and addicts is removed. I'm an ex-heroin addict first and foremost but I've battled cocaine, benzos, and booze as well. Almost everyone I work with drinks regularly, most of them it seems pretty heavily. Several people use cocaine and roughly 50% smokes the ganja.
EDIT: I will admit that I've seen some uninvited dicks and balls since joining the service industry... I'm not saying its like a regular thing but yeah it definitely happens. I'm pretty sure that movie is what inspired the idea in the first place though.

I wonder this alot too. Alot of people would hate my job, but I feel like it is perfect for me right now.
For me I find work in the service industry degrading. I'm not sure why, but it just makes me hate myself.
I'd much rather take part in making something than serving people's needs. Even if it isn't perfect it doesn't make me hate myself, other people, and life in general.
I have ton a fair amount of entry level jobs, and especially at first it has always appealed to me because it gives me a warm comfy "in the belly of the beast" feeling once you adjust to the rhythm and feel like you know what is going on.
I think of myself as an empathetic person, I like pretty much everyone I meet, but dealing with average American customers I always get a "who the fuck are these people?" feeling which isn't worth $10/hr to deal with for me, at least not any longer than 6 months straight.

The below-average looking waitress is forever butthurt, and her attitude makes her even less likely to please her dining clients.
I have many many friends and 2 ex girlfriends in food service/cleaning and it's fucking hard to do at most places really is ,therefore the nessicary synchronous ,for something as simple and complex is dishwashing at a restaurant. ( none of this is sarcastic, once an ex-girlfriend of mine broke her ankle" she was literally about to go back to work The next day" So we worked it out with her boss that I'd quit school for a week and take over for her. I've done it. For 2 days. Front of the house is where you can make 25-35 an hour depending on how good you are at talking pretty girls out of there money.
I washed dishes for this Korean joint. The first day I was transported to there other restaurant. No proper dishwashing equipment I had no clue where to even put things.
I just never showed back up. A fuck ton of dishes with a single washer. That's a load of garbage. As I'm also a prep cook as well. No. No no no. It took me 4 months to even get my w2 from them. No. Just no. I'm sure they're are plenty of Mexicans that can do this. I quit.
Fucking line out the door as they'd turn the restaurant. So wait I was supposed to be off hours ago why in the fuck am I doing this and not making you money? I've done a ton of shit for money washing dishes when I had to help people catch up but it was so fucked.

I know some white employers who only hire Mexicans.
It seems they have special skills.

They work hard and fast. But they also have homes in Mexico. So it is what it is really. God I hated that job. I quit in 2 days. No. Just no. I know my rights.
As do I. I knew a lady who wouldn't hire women. As there poor workers. I found that hilarious but in the same thought that is sexist as fuck.
I was not recording or anything. Women are shittier workers than men. In plain site. From a woman. That changed my thoughts and I quit the job after.

I think there's a psychological reason, far beyond having a home in Mexico.

Yeah bro I just realized towards the end of college that I wasn't a fan of stiff office work Sitting around playing with code It was fun in highschool when I was just hacking away at bots or macros and simple games But industry programming is a whole different beast And it's generally boring as fuck.
So I'm in search of physical labor work that will pay worth a damn. The degree doesn't hurt to have but I don't seek to work in a software oriented job. Started with dishes because I was coming off heroin and wanted work fast and low stress/commitment
Now they've got me cooking sandwiches and salads pizza etc
I enjoy life these days knowing that I am doing what I want to do rather than strive for some bullshit notion of success or happiness.

Damn you did a complete 180 mouse. Best of luck. I work a pretty stiff office job but it beats the restaurant industry any day of the week IMO

Thanks. My life has changed a ton and I'm a very different person than I was even four years ago. My problem is I can't sit still these days im in the zone in fast paced high stress environments
I plan on programming my entire life but I'm going to do side projects and hobbyist programming. Even develop some apps/games and make ad revenue maybe.

Robotics and automation might be worth a look. I know there is a demand for that stuff in many different fields and it combines computer hacking with the physical aspect of building something.

After I graduated with a degree in a medical field, and was licensed to practice it was a process getting a job in my field. Once hired, it was still a couple months until my start date. I didn't work the last year of school, so I needed money & found a cooking gig on craiglist. Real nice place too. That job was a lifesaver getting me though those months. The people that worked there also owned the place....all them had pooled their money to buy it. Awesome people, incredible food, great drinks. It was sweet. I need to go get dinner there again one of these days. It's far from here though.
Washing dishes blows, but is a good starting point. Easy job to get too. I started out as a dish washer when I moved to CO, and worked my way up to line cook. Worked at a few different restaurants, including when I moved back to PA. At one, wound up running the line & doing dishes, as the recession that hit the restaurant hard. That sucked. Especially when someone came in right at closing. We'd be stuck there mad late. I had a day job in a warehouse at the same time, and was technically making decent money. I was a dope fiend & booze hound at the time though, and every penny went to supporting my habit. In some respects I enjoyed the kitchen atmosphere, but it was so unhealthy for me. The last one was cool, but my act was cleaned up by then.

Sounds pretty racist to me, offer a Mexican a decent job vs a shitty dishwashing job.
Accepting your shitty circumstances doesn't mean you prefer it, as a natural born citizen of the US there are more opportunities than there are for a 3rd world immigrant (in the short run), we don't have to come to terms with shit jobs. Acknowledging that its a shit job no one could actually like outside of a Stockholm syndrome situation, or very short term, is also a prime motivator for acquiring better work.
You're grasping at straws if you need someone to outline why such a shitty job is objectively shitty.

I'm white and for about 10 years of my career I refused to hire whites and only hired Mexicans to work in the tissue culture lab I ran because white people usually hated sitting in front of a laminar flow hood all day with 20 stacks of petri plates to transfer.
Over many years, I found Mexicans were content with the job that whites usually disliked.
So yeah, I guess I'm racist.

They'll do shit repeatedly for money. As they ship it all back to Mexico. They're generally back of house. I speak Spanish because of it. They all have huge houses back home as I'd listen to there stories. I work here and send it all back home. Where my families have maids.
If your ever in Mexico hit up (insert family name) you will be fine. I'm entitled white so I don't particularly like working for below what I'm worth. As my money is spent just putting a roof over my head and maybe having fun once and a while. But American dollars are worth far more in Mexico.

Its amusing that you double down on being racist, but didn't address anything else.
Like I said, you're shoveling shit jobs to these people and expecting them to enjoy it, they're content because they have to be, as this is all they can get their hands on.

There's an entire language associated with working in restaurants. I could have a full tray and spin. No worries my friend I should have said I was gonna slip behind. I love restaurant work it's incredibly fun talking pretty girls out of there money.

The fact that it's like a finely tuned orchestra. We are all here to make money. BoH has the shit jobs. I'd much rather be front of the house. I can make you some money. I'm very good at it.
You become perceptive about people around you. And there's an entire restaurant language. But I learned to speak Spanish. It's the same thing but I can talk to them. I'd throw away 30% percent of my tips to the back of house and I was a busser. I didn't make this happen by myself. Even if it's 10 bucks that's food or pot or whatever.
Pay the cost to do business.

Dish washing was a fun first job when I was 14-17. That's when I was first introduced to the magic of psychedelics given to me by my co workers and later got a nice shroom connect where I was able to buy QPs to Half Ps.
Every single person who worked there did drugs of some kind, most were also alcoholics. We partied after work by the pool every night and smoked a shit ton of weed.
The job itself wasn't so bad, there were always 2 dishwashers on weekends and Wednesdays (which was wing night at the bar). Once you get into a good rhythm it's not overly demanding. We got to cook a little and do easy stuff like help the groundskeeper.
The owners were cool and smoking weed on the job was allowed. The job got me into smoking cigarettes because that was the only legit way to get to take a break.
There were a few hotties my age working as bus girls who I got to party with, one is still a very good friend to this day.
The bartenders gave me alcohol while I was working on New Years Eve.
The real downside was that I worked much longer hours than everyone else on night shift because I had more cleaning up to do including my own station. Especially on buffet nights there would be quite the stack of dishes by the time the place closed down.

Conrad is either a compulsive liar or the worlds luckiest line cook. His parents won the lottery and his wife is smoking hot... neither of which has been confirmed or denied, but Id like to believe him. He routinely tosses fried Mozzarella balls to the other cooks as we try to catch them in our mouths. After a few misses I finally catch one - "Touchdown!" shouts Ray in his thick Mexican accent. It's raining something steady outside and our dishwasher busts in from running the trash, soaked from head to toe. He's sweating like a whore in church and he's got a big splash of mustard on the top of his rotund belly. "Hey Conrad I've had enough, I'm gonna go get stoned" he shouts down line. "Alright Andy try to hurry back", Conrad says in a mock-motherly voice.
The waitresses are waiting on their food and listening to the bizzare rumblings of a slightly intoxicated backline. When our dialogue becomes boring, they'll occasionally start their own, but it's mostly confined to gossip and mixed drink recipes.
The man who's training me, Jay keeps repeating "Cat scratch feaver!" As if he's gonna sing the song, but he only knows those three words. I join him a few times in the tune, Conrad shakes his ass as he assembles an overpriced burger for an overweight Bills fan. Every now and then one of us steps off line for a smoke break, which is either a legitimate cigarette, a joint, or a few gulps from the box of Franzia in the walk-in.

Needs refinement. Some of it is clumsy, like how you splice in that mozzarella ball toss. Thats a shift in style from narrative to first person, and you flip flop throughout it. It gives it a bit of a literary stutter.

I actually find that kind of prosaic shift to be endearing, although increasingly popular to the point of bordering on cliché since Bukwoski and co have been making it in the relative mainstream.

Just bear in mind I didn't mean anything negative in that comment, just ruminating on the current trends of literature. On that note, people often try and avoid trends, being too cool for school and wanting to be original, but there's only so much you can do in that regard and it becomes a distraction.
Better imo to study whoever you enjoy, and write as you see fit without consideration
Anyways I've enjoyed your writing

You say working in a "high tech lab" as though it were something to take pride in, then go on about how people don't work for glory (pride). Do you actually have a legitimate argument? Because the holes, contradictions and fallacies are piling up.
What is a shit job... something physically demanding, demeaning with low pay.
Working in excess heat when your coworkers are not, being soaking wet when your coworkers are not, digging around in a dirty sink with filthy dishes when your coworkers are relatively clean. I've worked in a dozen kitchens across 5 states, the dishwashers are almost always disrespected by a large portion of the crew, they're always given the worst tasks, work with double standards regarding time efficiency and get paid less.
I can go on.

What you call a "shit job" others wouldn't. What you call low pay might be acceptable to someone else.
Regarding "demeaning work", unless your job description includes sucking the boss's dick, that's a matter of taste.

Its not a subjective matter within a culture, which is the whole point when we're talking about exceptions from different cultures.
Low pay is relative to the rest of your community, if you live in my town and you're making $8hr, you're making far far less than average. It might not matter to someone fresh off the boat, because they're an outsider taking advantage of our economy / prosperity, but it will matter for someone from here living check to check as a wage-slave.
Demeaning is not a matter of taste, it is a matter of how you are treated and viewed.
Again, when you're fresh off the boat you're an outsider, that kind of work is expected of you and you're not necessarily going to be looked at in an inclusive light regardless. If you're a 30 year old natural born American citizen working as a dishwasher, people will look down on you.
That aside, I've worked in a lot of kitchens across the country, looking down on the dishwashers is fairly universal in that experience. Immigrants included.

Sundays are vaguely interesting albeit depressing events at the local watering hole. Some drunk vagrant wearing a dirty bills sweater is going for a forward pass on a disinterested waitress wearing a tube top and too much eyeliner.
His poor attempt at flirtation is swiftly intercepted by a bill for the half-dozen overpriced tequilas he's gulped down since noon. That'll sober him up. It's raining outside and half of the town decided they'd rather get drunk and watch large men tackle each other than do anything of significance. Walk-outs are common, as a customer who's team falls dramatically behind becomes enraged and decides they aren't going to order.
The cooks on line are in low morale, though mask it well. One in their order is being arrested for cocaine distribution, and the already-barebones roster ensures painful hours for everyone. What's perhaps most frightening is not the loss of the hustler, but the idea of the manager without coke.

Nah you can basically find anything in restaurant. Generally young people. Worked at a place the line cooks would do lines of coke straight off the cutting board.
