I swear, white Americans always throw away the best parts of the animals. People don't eat the gizzards or intestines or organs, not only are these parts delicious, but they're also the most loaded with vitamins and healthiest for you.

Ya growing up in Alaska my dad was a big fisher. We'd be cleaning the fish out and these Asian people that lives across the way would always ask for the heads and guts.
I have had red snapper fish head stew when I worked for Koreans. It was delicious but ya you'd ladle some and get a fat eyeball on top. No thanks haha.

Tilapia I don't care for. Cod is on par with halibut imo. If you blind taste tested me and I've eaten a ton of difference there really is no discernible difference. Accept cod is far cheaper than halibut.

Tilapia you have to cook whole with the bones in. Filets are no good. I'm always surprised by how different those frozen filets taste compared to a whole fish.

Also I've had the soup with the huge bluefin tuna eyeballs in it. Even that makes Japanese people queasy, and my relatives were surprised I am able to eat it just fine.
The belly is not the same thing as the guts though, when I was referring to the belly I meant literally the belly flesh, that's where Toro aka fatty tuna comes from, is from the belly. And it's the most expensive sashimi out there,its $100 per lb even if you buy from a market.

Actually I find tilapia is the most superior way if you are consuming it in the traditional Japanese way--which is broiled until the skin is crispy, then dipped in ponzu with grated daikon radish and scallions.
I've eaten a bunch of fish this way, and IMO the best fish to eat the traditional Japanese way is with tilapia, next best is with cod--and the fish must be whole, with the bones still in it when it's cooked. Filets are no good, filets come out more dry and less juicy after cooking. For similar reasons bone-in beef is so much better.
Tilapia is one of the cheapest fishes out there too, you can buy a whole one for $2 at the market. I don't know where you're going where tilapia is $16 for a filet.
the problem for me is flavor. I taste the poo, I taste the dogfood, I taste what the fish has been eating

Maybe its supply and demand? Demand for white meat.
I like white meat, but i eat dark meat too. White meat seems easier to cook while dark meat slightly more easy to fuck up.
White meat is more basic, dark meat more exotic. Most people in the country like the basic could be an appearance thing too.

So you don't ever eat farmed fish ever?
I wanna blind taste test you now.
I'm that way about beef, not fish. I can taste when beef have been given chemicals or have been fed corn, standard supermarket beef tastes like shit.

I feel like white meat is easier to fuck up. If you screw up or cook it over one extra minute, it comes out dry and flavorless. With dark you can just grill it or bake and broil it and add salt and pepper, you don't even have to marinade or use strong seasonings and it comes out tender and juicy.
