Time to fruit my Pan Cyans... HELP!

So my jars are fully colonized,  rye grain etc.
I have black kow manure,  coco coir(of course) verm,  jiffy mix, organic lime & so forth.  I've read up on a lot of the different teks & whatnot on the search here but still feel confused anyone have any handy tips with what I have have?
Really want the caps to fruit well so anything would be appreciated.

BTW there's a bit of water that's appeared in my pan jars.. Is this normal?  Will it effect colonization? Don't really know what to make of it.  I've seen in cube jars early in my cultivation days but not recently.

SO I've decided on RR's technique with manure after searching FOREVER it seemed I came up on this,

Mix all your substrate ingredients except the verm together and bring to field capacity. 
I'd suggest verm at up to 50% by volume of your substrate mix, since cow manure can be quite muddy without the verm. 
One handful of gypsum for each 20 handfuls of substrate mix)

Load into quart jars and pasteurize in a large pot of water on the stove. 
When your thermometer reads 140F in the center of one of the jars, shut off the stove for a few minutes,
Maintain 140F to 160F for one hour by manipulating your stove setting. 
but then you'll have the routine down and can just repeat it after that.

I'm hoping this will work with the Pan Cyans.  But as for the casing layer,  will jiffy mix do?  Or should I seek out another method as far as the casing layer goes?

the black kow will work just be sure to strain it out so you only have the powdery part of it and none of the chunky debris it has in it. in my opinion, using verm in your pan substrate isn't going to really add anything beneficial. if your substrate is at proper  field capacity you will have no need for it as a moisture source and since it is non-nutritive it offers no advantage in that regard. and the texture of straw or coir will work better in terms of reducing the manure's mud-like consistency. if you are seeing an accumulation of water in your jars it could be a sign of infection so keep an eye on any substrate containers that spawn is mixed into. and the jiffy mix will work fine as a casing layer. just allow your substrate a few days to consolidate after you see %100 visible colonization so the mycelium has time to digest it's meal and go into fruiting mode. this will help prevent overlay of the casing layer.

Mold grows on straight vermiculite if it's damp. PF cakes shrink to less than half their original volume. Vermiculite is low nutrition but not non nutritional. Mineral source. Some fungi live on limestone and trickling water. Careful what you believe to be non nutritive

yeah, i've been using straw but it sounds like coir will work just as well. alot recipes call for a 50/50 mix but i just kind of measure it by eyeball/feel by just adding the strained manure to the chopped straw until it seems right. the end result should be slightly fluffy. then just pasteurize between 140F-160F for two hours and let it drain and cool and it's good to go.
