Moisture getting inside jars when boiling PF TEK Jars!!
    #23674441 - 09/24/16 04:12 PM (7 years, 4 months ago)

Hey all I am having an issue with preventing moisture from getting inside my 1/2 pint wide mouth jars when boiling them.  First off, I do not have a pressure cooker, instead I am using a 16 QT stainless steel pot to do the sterilizing for my PF Tek jars.  I put 3 layers of jar lids in the pot and cover each layer with aluminum foil.  I add water just to the bottom of the top layer of lids, so the jars are out of the boiling water.  I put 2 layers of aluminum foil around my jars, one is folded and put on top, the 2nd is a huge piece that I wrap all the way around the jars.  I put two layers of masking tape over each inoculation hole. I have experimented with tightly closed lids and loosely fit lids and I have found that tightly fit lids seem to work better for keeping out moisture, but everything I read says to keep them loosely fit.  When boiling, I then reduce the heat so it just continues to boil.

How do you guys prevent the jars from getting moisture inside with loosely fit lids?  I cannot seem to get that to work!  What is the reasoning why jar lids need to be loosely fit?  Do you guys have any other tips about this, or certain ways to put the aluminum foil on to prevent moisture from getting inside?

I add water to the top layer of lids sitting at the bottom of the pot to keep my jars totally out of the boiling water.  I think the steam is what is getting inside the jars, not the splashing water.

The water is too high. Have you ever boiled spaghetti and filled it too much?  It boils over. Fill to the verm layer?

Edit: top layer of lids under pf tek jars........got it.  Disregard

You could use bags to put your jars inside. Test them first if they stand the heat. Suck out all of the air and seal them. I never tried ghetto techniques like that but it should work.

Water can come half way uo the side of the jar. Use foil over the top. Water doesn't get in during sterilization
