This doesn't look like normal mycelium... But what IS it if it's not cubensis? (Updated)

It's very hard to see in the photo, but the mycelium doesn't look fuzzy/tomentose like usual at all... the overall texture of it is very "sharp" looking.. the best way I could describe it is like tiny icicles protruding.

I opened the jar and it doesn't smell like mushrooms. It smells slightly sweet, maybe even slightly sour or vinegary? Overall very strange and has peaked my curiosity as to what kind of fungi it is.

This is the best photo I could get of the short little icicles protruding from the mycelium (circled in the red):

Other side of the jar... not as clear but same effect if you see in person:

There are two kinds of mycelium monokaryotic and dikaryotic

this is monokaryotic mycelium (the one you were talking about, the fuzzy one)

spores you inject to your jars/bags germinate and produce monokaryotic mycelium.  This kind of mycelium can't produce fruits (mushrooms).  It needs to find a compatible pair for itself and mate so it can form dikaryotic mycelium

as you can see, its form is more string-like (rhizomorphic) and as you said "sharp".

Also, bacteria may cause mycelium to be thicker.

If you got your spores from one of the sponsors, I doubt that you've got something other than cubensis.

Yes it looks like normal dikryotic mycelium growing in the presence of some awful fuckin bacteria dude. Those spikes, also known as mycelium fingers, are one of the major growths you see mycelium do when in the presence of bacteria. There's also the sporadic cotton balls, which your jar is doing, wet af looking grains, which your jar has. There's also the thin ass ropy mycelium attempting to colonize the bacteria ridden grains, which your shit has lol!

I hope you have backup jars going  if not get on that, oh and agar too for some inoculant cleanup.. The chances of having monokryotic mycelium is VERY low, so low that I highly doubt you'll ever have it.

Yep I got backup jars... I knew this was bad from the smell... but just wanted to know what was actually going on with these guys.  It's all cause of this one bag of spawn I used... everything from it went bad eventually so I threw it out. I've been working with agar ever since and none of the agar-inoculated jars have contaminated!  Thanks!  "Mycelium fingers"... now I know!

I let the jar grow out. One week later this is how it looks:

Looks like some sort of hericium-genus mushroom, right? Is this edible? Should I... eat it? lol.. or is it bacteria infused? (Note: I'm not going to eat it.)
