Growing oysters in terrarium, advice?

Hi,
I was trying to grow oysters indoors, in a homemade terrarium.

How I tried doing it was, get store-bought oysters, cut the mycelium at the bottom, put them in jars with coffee grounds and other stuff. The contents of the jar was pressure-cooked before putting in the oyster mycelium.
Had the tyvek ventilation on the top.
Some of the jars did ok, and they did not fill up completely because the oyster material would not sink to the bottom of the jar... it sort of grew rapidily and made a big white bubble in the middle that was a big lump of material.
So I took a good jar, and pressure cooked some other jars with wild bird seed in them. I put a jar of sterile bird seed in a zip lock, put in a jar of coffee + oyster mycelium, then put another sterile jar of birdseed atop this.
Had it in the terrarium.
At first, seemed very good, I tried maybe 2 attempts of this... the ball certainly grew in the bird seed.
But then it just became contaminated and never amounted to anything and I threw it out.
It seemed like Rye seed might have solved this problem I was having with coffee grounds turning to a ball that would not break or mix with other material.
But I was also wondering how important temperature control is for oysters? My room was hot, and my terrarium had no temperature control and had only natural lighting from the window in the room.
Is this coffee grounds method with store-bought oysters, is it a bad way ? Or can it be modified to work?

  2016 was a good year, +5 lb of Morels, and I ate 8 new species of wild mushrooms: Herecium, Chanterelles, Black Trumpets, Parasol Mushroom, Fairy Ring Mushroom (marasmius oreades), Wild Oyster, Slippery Jacks, Honey Mushrooms (found over 100lb, froze 4lb in my freezer.) This was the video I saw about doing it in coffee... but he had straw he used, and I am in the city with a house, and that stuff would be too messy!
