I haven't found any posts on this. I'm assuming this is normal, and I find it really cool. (My first mushroom ever!)

Yup. They tend to blue more especially when they come into contact with a knife.
Just with lettuce if you cut lettuce with a metal knife it will turn black and get ugly around the edges in no time. if you tear it or cut it with plastic knife it stays green 4eva.
My theory is that the metal contact begins oxidation much more quickly.

It bruises almost immediately when you cut through it. Once it makes contact with the air, it turns blue, walaa

I don't think YOU understand, there is a TON of bruising. Maybe not in the middle middle which might be what you speak of. If so yeah that's cool I don't know the cell science and fleshy composition of the meat in stems but you might think theres less blue oxidizers inthere. .

I did compare oxidizables in lettuce to psilocyben I may be wrong. It mucht be additional pressure in bruising from knife cutting force either way nice piz and never stop discovering.

Why does the center and the skin remain white? That's very interesting if it occurs faster than the eye can perceive. I'm not, in any way, saying you're incorrect. Just doesn't seem plausible to me.

The center is less meaty normally, not totally hollow, but Very spongey and water retaining, I'm assuming this is like the stalk of a plant - we'll use cannabis for example- nutrients are carried up through the center of stems and stalks, into the leaves.
Looking at it that way, it's like a little chamber that holds water better than the outside stipe.
The inside of the stipe is composed of sterile hyphae.

Well, -she- said.
This is why we use the very center of the stipe as a means to clone. It is very healthy and aggressive Myc usually and very clean in comparison.
