Pressure cooking Jars advice
    #23632936 - 09/10/16 03:59 PM (7 years, 5 months ago)

Right now i have rye soaking and I'm going to start preparing my jars for Pressure cooking. My question is how do you all normally construct your lids? I heard of a cultivator who puts a 1/4 in hole on the top, fill it with polyfill and cover with coffee filters. Is that a good set up and if it is do i pressure cook the jars with the polyfill and coffee filters on it? Lastly i have a 22qrt P.C and normally add 2-3in of water, is that sufficient? Thanks guys!

That is one method.  Instead of a coffee filter though, use aluminum foil over the jar lid so water doesn't get in while pressure cooking.  You can take it off in you still air box when you are ready to inoculate it.

Fill up water to about halfway up your jar.  That will be plenty.  Also use some jar rings in the bottom to sit your jars on that way it doesn't burn the bottom of your jars.

Don't bring up temps too high too fast.  Just bring them up moderately and when your 15 psi rocker begins rattling, reduce heat just enough so the rocker doesn't rasp around annoyingly.  Pressure cook for a minimum of 90 minutes.

I poke two holes on my lids and cover one with micropore tape (both from outside and inside) and the other one with silicone (again I put silicone on both sides of the hole) to make lids with self-healing injection ports. Let them rest overnight and you're good to go for PCing (don't forget to cover them with foil when PCing)
