So, i ran out of yeast for my cider making, and i had a little dry ale yeast and a little champagne yeast left.  I threw them both in and brewed a batch from juiced unwashed backyard apples.  After a racked and filtered the cider, i started a new batch from the sediment and more apples from the same apple tree.  Now it is my understanding, that each time i ferment to dryness and cold crash the yeast, it initiates sexual reproduction.  Various brewers yeasts are virtually all specialized Saccharomyces cerevisiae  spp., and thus able to freely mate.  In addition, there may have been some wild Saccharomyces spp. present on the unwashed apples.  I'm on my third batch with this yeast and i wonder if i am breeding my own special strain, or if the yeast will eventually "go wild" after enough generations of sexual reproduction.

I love to brew! And that is a great question! Sach is a sexual, so no new yeast variety, but it will be a unique blend of yeast and whatever else might be lurking in there. Overtime the yeast can mutate giving you a unique strain, this is the idea of a "house" yeast at a brewery. Many breweries only reuse a yeast so many times in fear of picking up new off characteristics.

Interesting! I guess that makes sense! After further reading the research shows that out-crossing takes place roughly ever 50,000 cell divisions. So with billions of yeast it must happen, but I wonder to what extent that will reach a critical mass without isolation work.

Cold crashing yeast makes it go dormant. Most yeast falls out of suspension(flocculates) after attenuation(all the sugar is eaten) is reached any how. Reproduction occurs during the initial stage of fermentation.

If you didn't cold crash the yeast would clean up the wort for a good amount of time

right, but sporulation occurs when environmental stress like food deprivation is present.  The resulting haploid spores undergo sexual reproduction when the environment becomes favorable again.  So, when i drain off my cider and add new wort or juice or sugar water or whatever, thats when the magic is happening, no?

Yeast will go dormant in the presence of alcohol, the nutrition they need to bud is stored in the cell when they go dormant. So maybe the idea of being in a deprivation of food isn't quite accurate for the situation, especially if you are repitching wort onto the cake. If there were a situation where there were no nutrients for the yeast, the yeast would probably be the nutrients for another organism.

I wouldn't reuse yeast unless I was 100% sure it wasn't contaminated from foreign yeast. If you used unwashed apples, it's definitely contaminated. By using clean ale or champagne yeast it'll be more likely to turn out a drinkable product.

i dig that.  that being said, i'm on my 3rd experimental batch and everything has been fine so far.  No major off-flavors or anything.  My latest batch was made from a mash of bananas and strawberries and it seems to be shaping up just fine so far.

I didn't see where he boiled his cider. If you want to kill the residual wild yeasts introduced from the skins, Camden tablets(metasulphate) can be added before pitching yeast for fermentation. These yeast & Camden will drop out of suspension, siphon the cider off the top.

Also, pectin can be removed with pectin enzymes.
The pectin will eventually settle out, it doesn't effect flavor but it looks weird and has a weird texture. Dropping the pectin also clears up the finished cider.

It's a few extra steps but it's worth the effort.

I would be concerned about other things growing if it was not sterilized.

Anyone know how in the old days gas exchange was managed for old fermentation methods?

A lot of breweries used open fermentation, I think Pilsner urquell still does this, but it is in large underground cellars.

so i'm about a month into fermentation on this banana-strawberry concoction.
It seems to be clearing up nicely, and i'm down to about 5 bubbles per minute on my airlock.  My girlfriend and i tasted it, and it's reasonably good at this point.  It seems a bit harsh though.  It has a burn like liquor. Makes me wonder if i'm fermenting other alcohols in significant percentage by accident.  Probably i'm just trippin and it will mellow out after resting for a bit.

It tastes pretty dry.  Not much sugar left at all to be honest.  I was hoping for that, because i plan to freeze concentrate it, and i've run into issues with high amounts of residual sugars also ending up in my applejack.
