How much better is a dehydrator, compared to air-drying in front of a fan in a low-humidity environment? I'm not doubting the logic, but is the difference negligible? I'm just talking basic cubes too, not the exotic stuff mentioned above.

A fan can never get mushrooms all the way dry, so, they're in completely different races. For fan drying, the finish line ends up at about 90-95% dry, which leaves plenty of room for potency to deteriorate. For dehydrators, they get 100% dry, and you can store them in an airtight container without worrying about them losing potency.
It's worth mentioning that states of in between dryness make it damn near impossible to figure out an accurate dosage. You might think you got 2 ounces dry out of your grow, but it might only be 1.7 ounces if it were dried all the way, or less. I like to take a gram and actually experience effects. 
You'll also have a really bad time if you put mushrooms that aren't completely dry in the freezer. Doesn't take a degree in physics to guess what expanding ice crystals do to fungal tissue.

Just get the dehydrator. Theres a reason its the standard method for drying.

Sounds like I'll start looking into dehydrators then. Not to mention, I've always wanted to make my own beef jerky!

I saw someone say to set it to 150+ degrees, and also another mention of 170. What is the ideal temp? I'm sure I'll research more, but it'll be nice to get a ballpark number from u guys.

As high as it'll go. 150F-180F are all pretty reasonable temp. I'm not sure how high it takes to physically burn them but it doesn't happen at 165F and people with stronger dehydrators than mine don't seem to have issues. I should think up to 190F is okay. Maybe even hotter than that, since boiling point is otherwise fine. Discoloration could become an issue though.

I seem to remember reading that temperatures up to 300 degrees F were acceptable and wouldn't affect potency, but that boiling point for water was advised as the upper limit for safety's sake.

Those 300F degree temps were in hot oil though, and boiling water is, well, water. Dry heat at such temperatures could cause some charring I'd imagine. It does to frozen pizzas. However high the dehydrator goes will be an approved temp for drying food though so..

If the nesco gets the job done, I'm good with that price. Oh and if I could find something cheaper at a thrift store, I'd go that route, but I'm a little strapped for cash ATM. I have an Overstock card though, to rack up more debt unfortunately haha (they're pretty easy to get with so-so credit too - just throwing that out there )

It depends how [ir]responsible you want to be with it lol. They usually give you 6-12 months with zero interest, and after that, you're looking at roughly 2% of your balance for interest each month. It really isn't much, compared to other routes of borrowing cash. Oh and good cards give you rewards for merely using the card. I have a Citi card that I've made $50 off this year already (which is definitely more than I've been charged in interest). As long as you can make the minimum payment each month, (usually $25) then it's a beneficial thing to build credit IMO.
