best fruiting chamber for trays?

I have some ms jars that i want to grow out, but dont have the time or space to make monotub for all of them. I want to try growing each quart of spawn in its own individual tray. I have spare mono style tubs that can use for a terrarium. Is there a way to use what i have, or do i need to build a sgfc?

Yep, monos are great for trays. I hope you are still using bulk though, grain is horrible at retaining water on it's own.
I have been using nothing but monos and trays lately, so easy to inspect, harvest and pull the sub out without breaking it into a million pieces.

I haven't heard that before, but yes maybe. It's just an old pic for illustrative purposes.
Every tray in my greenhouse has a similar flush to the above using MS.

Monos!
I've actually made a conscious decision to stop using the SGFC and switch entirely to monos. Getting tired of little critters flying through the window and deciding it's a yummy habitat.
The other day I went out and bought two 55 quart tubs, and a few little mini tubs, and enough polyfil to last a life time. All are getting holes cut into the sides. :/
At least the wife can find some use for all that polyfil, no way I'm gonna be able to use it all. Maybe we'll actually use it for what it's marketed for.

I was planning on just casing the grains with coco and verm, but would it be better to mix the grains with a bulk substrate instead? Maybe a 1:1 ratio?

Instead of casing the grains with verm/coco, mix the grains with verm/coco. Actually, add in a little gypsum and you'll have what we call CVG substrate. It works good. And I think 1:1 will be fine, it'll colonize fast. When it's done, case with some jiffy mix or something, or just some verm.

Can i put them into fruiting immediately, or would the trays get too dry? Is it woth it to dunk the grains before spawning. I feel like it increases the chances of bacterial contamination.

You'll need to let the bulk colonize after spawning. I would do this in a still air box personally to prevent as much contamination as possible, but it can be done open air at this point. Once your grain is fully colonized, contams aren't a huge threat anymore, but until you get that bulk 100%, they are still looming.
After 100%, it's no problem.

Frank suggested soaking grains in tap water before spawning. I did this in my first monos and had baterial contamination in all of them. It could have been my substrate being too wet, but i don't think the exsposure and excessive wetness helped. I skipped the grain dunk, and made my substrate with about a court and a half less then what Frank suggested in his recipe. The tub is now booming with pins

Don't soak them. Not sure why somebody would tell you that.
Break them up and get them into a pasteurized and properly hydrated bulk substrate like CVG.
Massage the grain into the sub with a gloved hand, or if you don't wanna do that, simple pour it into the sub. You can pour in layers without even touching the grain if you so choose.
Within 24-48 hours, the Myc will begin to recover and start colonizing the bulk you just mixed in. It'll take an additional 10-15 days probably to colonize that.
After that, case it, and either go straight to fruiting or let your casing colonize for 2-3 days. You only want the casing to show about 30% colonization. So it should look patchy.

GH's are great for the folks who manage to dial them in perfectly, which is easier said then done. You need to be able to read what your sub/shrooms are telling you or else you'll just be shooting in the dark.
Also, for folks who aren't growing shitloads of trays, monos are the better choice. A GH will work best when it's full. I can stack 5 monos on each other with 4 trays in each mono. If you were producing more than that, you could benefit from learning how to dial in a GH properly. If not, monos will be more than enough.

I did a tote with no holes and a lot of fanning for a couple of weeks with wet perite in the bottom lol and 1 qt of spawn

I did trays in SGFC before and had good results, you just have to be careful when misting and try not to make puddles of water on the sub.

I wouldn't use an SGFC for anything but cakes personally. Dries too fast for my taste. The poly in a mono traps moisture pretty well I find. The trays I use aren't deep so I find it important to retain as much moisture as possible.
