2 questions about Golden Oysters

This is my first time trying to fruit Gold Oysters. Thanks for helping a newbie out!

I inoculated this bag on 8/21, or 12 days ago. It looks to me like it's almost ready to go into the fruiting chamber. It's a new formula and they seem to like it, but 12 days seems really fast. Should I give it the full 3 weeks I am more accustomed to, regardless of appearance?

These have been in the chamber for a 2 weeks and started pinning about a week ago. Since then, some of the pins near the 2 X's I have cut have grown larger, but they have pinned a lot in other places too. How do I avoid this? And is this normally how long they take? These bags colonized for 4 and 1/2 weeks as I couldn't get them into the chamber sooner.
Chamber conditions currently are 79°F 84%-95% humidity, constant active exhaust. Humidification comes on for about 5 minutes every 15 minutes.

To be honest, it looks completely normal for Golden oyster. It has most likely fully colonized the substrate.
Tendency to fruit and mature in spots. It wants to fruit, fruit it, nice work.

Hey MorePies, the golds are pretty foolproof...they're extremely quick to colonize and start forming tubers all over the place...I think the key is to poke holes or cut slits or whatever right when the sub just looks colonized(sterilized filter bags), that way you coax the tubers to develop there and not all over. That said, I ran them on straw as well with holes all over the bag and they fruited out the holes as intended but also formed tubers all over under the plastic. Looks like your shit's gonna blow up. What's the sub? Sorry to drone on...

Thanks for the replies, I will give them a few more days. What kind of time line are you seeing from putting into fruiting conditions and harvesting?
It's a mix that I believe I have improved upon. It's Sawdust and coffee chaff @15%. The Sawdust is from a carpentry shop and is a mix of oak, poplar, walnut, alder? Etc. I really only know that there is nothing aromatic or man made. Texture lyrics, I think it's great stuff. there is a mix of dust and shavings. That reminds me, I need to get more on Monday!

About 6-7 days on the wood blocks. Keep in mind it's pretty cool in my fruiter ~ 64-69F so I think they grow a bit slower. Pretty sure the ones on straw were done in 4 days. The bags in this picture were spawned 8/9 and 8/16. I put them in a day apart...the subs were slightly different resulting in varied colonization times and might have different spawn ratios (I'll check later). Either way, those from 8/16 are almost ready to harvest, probably tomorrow and that's like 17 days.

Gorgeous looking clusters right there! I think my bags were pretty well stalled, they have been in there going on 2 weeks! The next round should prove more of a baseline.

Thanks, MorePies! Looking back at your op, you might drop the temp in you fruiting chamber if possible. I've read that golds are a warmer variety but the strain I have seems to do very well around 70F. That said, the outdoor shit is pretty fat and it's been around 80F here last few days but hey, Mother Nature.
