Does this look healthy or like some kind of contamination?

I mixed my WBS spawn with coir substrate 2 nights ago and now it is looking like this.

The spawn had the funky sweet smell, so there's a high chance there was a bacterial contamination. I can't really tell though since bacterial contams are white, like mycelium.

looks normal but if you really want to find a problem with how much it grew in 36 hours you should throw it out and start with a lower spawn ratio.

looks normal but if you really want to find a problem with how much it grew in 36 hours you should throw it out and start with a lower spawn ratio.
This was actually a 1:2 spawn to substrate ratio. I went low with the spawn.

1:2 is higher than you would think. I've used 1:3 with great results for years and people that work with manure can even go as low as 1:10

At this rate, how long before the coir is fully colonized? Do I add the casing layer immediately after full colonization or some time before?

Give it a couple of days.
Case when its 100% colonized then fruit it.

I've read that it's good to let the casing layer colonize 20-30% before introducing fruiting conditions. Does it make a difference?

Some people do this some people do that, personally i dont have much experience with casing .
So do your search or wait for someone more experienced.

People do it alot of different methods but yes this method works. Also I wouldn't even bother casing unless I was growing penis envy, this opinion is shared and well documented.

When he says medium polyfill, does that mean I shouldn't stuff the bottom holes as tightly as possible?

If you feel you need casing, use it, even if it's just a thin layer of vermiculite over the Myc. It does not have to colonize through unless you are using a thick layer of casing.
Casing helps keep the microclimate at the surface ideal for mushrooms. Sometimes you'll notice cased substrate produces mushrooms faster than non cases simply because it takes longer to dial in stuff because you don't have casing protecting your Myc from non ideal conditions at times.
For the record, I always case with -something-. Even if it's just a bit of peat, coco, jiffy, verm, etc.

a sweet smell usually signifies the presence of bacteria, and does not look like mushroom mycelium. Some mold mycelium resemble mushroom myc in appearance though. Grains on the surface are not ideal. It's best to cover the exposed grains on top with some of the bulk sub material. The tub looks good at the moment. Keep an eye out for trich, as it may be knocking at your door before 100% colonization. Working with contaminated spawn can be a crap shoot. Most of the time it molds, but sometimes you get lucky. I hope that tub works out for you. Keep us posted.

I already introduced fruiting conditions, is it too late to add a thin layer of casing?

If you JUST introduced fruiting you can probably still case. Casing is something better done in advance knowing you're going to do it though, rather than last minute.
