Could have just posted a hyperlink to the reference.
Doesn't seem to be a contaminate from your fan, so much as it is bruising. So simply don't use a fan and mist more. Put a towel under a milk crate and put the SGFC on top for best air flow.

In my opinion, there is not a lot to be said about your grow at this time. YaMoonSun's reply is great. The bruising you are seeing is reminiscent of your cake drying out... Remember that mushroom cultivation in the fruiting stage is all about a few key variables that must be present...(These are the most important in my opinion-in order): -Fresh Air Exchange -Humidity (at the substrate level) -Light -Patience
Humidity at the substrate level is best achieved by misting and wetting the vermiculite and allowing it to evaporate (causing a large amount of humidity at the cakes surface). When you: Mist>Fan>Allow to dry>Mist>Fan>Allow to dry you are stimulating primordial growth and causing your cake to fruit.
Right now, your cakes look a bit dry, which means they are not getting the moisture they need. You should definitely mist more and fan ONLY after misting. SGFC's get ALL their required fresh air due to their design. The ONLY reason you fan after misting is to rid the chamber of humid air so that your vermiculite can rid itself of it's moisture more quickly - replacing that humid air you just fanned out with more humid air.
Do not fan heavily at all. (Some may argue that NO fanning is required in a SGFC.) I have had luck with one quick wave of the lid and nothing more. Air can only hold so much humidity...by getting rid of the humid air you are allowing more humid air to take its place. This comes from your vermiculite adhered to your cakes and the perlite in your SGFC.

Also, it looks like a lot of your verm has fallen off the cakes? (Not sure about this-just a question!) If so, next time- attempt to find a finer grade vermiculite or put the vermiculite you roll with through a grinder of some sort...the surface area will still be there even after the grind- however, the finer verm will adhere to the cake better.
Do not attempt to "Re-roll", there are a lot of contaminates on the cake that will grow if you give them a perfect climate to do so. You are now sort of "stuck with what you started with". No big deal, just make sure to watch them carefully.
Your grow does not look terrible. Double check SGFC teks to make sure your SGFC is made to spec.
-Holes 2" on all six sides -Clearance from ground -4-6" of perlite...nothing less...nothing more!
