Your Parents Cooking 2

Yep, you heard me, I know you'd never insult your parents cooking, I will but I do it with at least a little tact, it's my mom, gotta have respect for her, she buseted her ass all her life to make sure I had my needs, made sure 4 kids and a bunch of stray kids were well fed. At home I learned the basics of cooking at a young age and have improved greatly at cooking, partially because I worked in restaurants until I was 17, worked commercial kitchens and I can cook pretty damned well, my kids prefer it over restaurants. the only friend who's parents knew how to cook were from Quebecistan but they were always serving bastard's tongue and goat's bladder or something...
anyway, to cut to the chase, a few years ago I realized my mother cant cook for shit anymore, it's as if she's poisoning us with bad food. meat is always overcooked unless it's chicken, then it's undercooked. she'd bake pork chops in the oven which in my opinion is a big fucking no and she'd overcook the shit out of them to the point they were suitable for shoe soles. looking back, there was a lot of that shit as a kid too.

sauces are a foreign concept, blood in meat is gross, and raw foods are healthy for you. but other than when it comes to cooking red meat, no, she is actually pretty good...simple, but good.
my dad, i used to think his breakfasts and steaks were great...until i realized wow my dad is gullible as fuck and thinks undercooked meat will kill a mofo.
his brother was a butcher, so he'd get awesome meats...and ruin em. LOL. ribs were always fall off the bone though, i mean, well, you can't really complain...even though it's still overcooked.

My dad could make a hell of a steak, but that's about all I've seen from my dad. My mom did most, if not all, of the cooking, AND IMHO it was good, sometimes it was great, other times maybe the chicken was a little over cooked.. BUT I usually kept my mouth shut, I didn't really care anyway, I don't complain about that shit, if it fills my stomach then it is good that's my motto.

with really lean meats that dont have much connective tissues it makes the shit dry and tough. you dont want to complain because they're your folks, you dont want to piss them off because them cooking for you is like their way of saying they dont want you to die yet

My mother is a pretty decent cook.. she can make a few dishes really well.
My grandmother on my dad's side however.... was the bomb.com. I spent a lot of time with them growing up and lived with them for a while. They are both Italian, came here together on the boat. From Genoa (northern Italy) Grandma cooked like it was her job... she was always in the kitchen cooking up something.. she spent hours in the kitchen every day. Everything she made was amazing her spaghetti & meatballs sauce took all day to cook, most of the tomatoes and peppers came from the garden my grandpa had. He canned shitloads of peppers, cucumbers, tomatoes and whatnot with vinegar and herbs and stuff. He had a stockpile of like 100 jars. Neverending supply of antipasto. Breakfast she would always have some scrambled eggs for everyone with cheese, sausage/bacon and bread She always had a 5 gallon thing of sun tea on hand. Lunch was usually paninis or something similar. Dinner was always a huge feast with like 5-6 dishes. You want sweets? She always had a stockpile of little debbie stuff and other sweet things under the sink.
Basically whenever you walked into the house you would be asked if you were hungry no matter what time of day, be fed a massive fucking feast and keep being fed until you are about to explode. No one ever left that house even remotely hungry.

That jello mold thing looks disgusting
My mother cooks like a chef (I've worked with a lot of chefs, her food is dank as fuck) I cook average for an experienced line cook, good but nothing special
It would be nice to have more time for cooking, learning new recipes and such, but there are too many other things going on most of the time. Priorities

I was raised by my grandparents mostly and my grandmother was terrible with everything except for a few select items. As is typical thus far in the thread, she was particularly bad with steak and pork chops, being overcooked to inedibility.
When i was an early teen and she cooked steak or chops, i would tell her i'd eat it later. When she would go to bed, i would put the plate into the sink and plastic wrap in the trash to avoid suspicion. I would then go out on my bike with the lump ov meat that once had the potential to become food before meeting my grandmother, and ride to this particular black pickup truck down the street and throw it into the bed. I do wonder what the person ever thought about all these steaks and pork chops that would randomly accumulate in hir pickup bed. I know it's bad that the food went to waste, but i did'nt want to pay to ship it to Somalia so i just threw them in a truck bed. I deserved better anyway. I eventually got a foreman grille and cooked the steaks myself.

I think this is some kind of comfort food for people who lived during the great depression. When I worked at a nursing home as a food server and the residents would vote on foods they wanted. They wanted hello with cabbage and carrots, and always ate the hell out it.

dont get me wrong, there were plenty of times my mom did really well and when I was younger I was either well brainwashed into believing most of it was good, pork chops baked int he oven and meatloaf being the exceptions (her meatloaf actually was great the last time). the fried pork chops were great. lately she's gotten to where she'll take a pork tenderloin and try to make it 'tender' by over baking it or by dropping it in a crock pot
down here the expression is "it'll make a turd"

My grandma on my mom's side however... completely fucking different story. She was senile for as long as I can remember... and her idea of dinner was throwing a raw chicken into a pot of boiling water and serving it once it was white.

this kind of shit was coming into vogue in the late 40s and by the late 50s was pretty popular, in the mid 60s it started dying out with only a few people trying it. now jello with fruits and stuff doesnt sound as horrid but damn yo....
hell, for all I know the veggies in jello is delicious, I wouldnt know, I dont touch jello if I can avoid it. it's not food, it's the devil

my mom cooked basic midwest style food. pan fried pork chops and mashed potatoes with gravy. stuff like that. It wasn't too bad but it wasn't great either. Once or twice she tried something a little more exotic and it never went well.
I am pretty fucking good at cooking.

Aside from Quebec, Canada doesn't really have its own distinct cuisine for the most part, more just transplants from elsewhere. My grandmother cooked roasts and stuff like that, and my parents cooked some stuff along those lines (roasts, stews etc) plus their interpretations of various "international" styles of cooking, Italian, Chinese, Indian etc.

My mom is a good enough cook. but she left us when I was 8. After a few years of cereal, frozen pre-made burritos, and popsicles, I had to learn to cook for my dad and sister and myself.
But my mother-in-law is like your mom Pris. She cooks pretty bad. Don't get me wrong, some stuff is edible and even good, but most is bland and overcooked. way overcooked. Her meats suck all the moisture out of your mouth they are so dry. Her vegetables are so mushy they puree themselves under their own weight. Her noodles are indistinguishable from the broth.
but I eat it up with a grin on my face every time.

Also, my dad and my mom were damn good cooks. I was very lucky. Only child too. Probably why it was soooo good.

Prisoner#1 said: anyway, to cut to the chase, a few years ago I realized my mother cant cook for shit anymore, it's as if she's poisoning us with bad food. meat is always overcooked unless it's chicken, then it's undercooked. she'd bake pork chops in the oven which in my opinion is a big fucking no and she'd overcook the shit out of them to the point they were suitable for shoe soles. looking back, there was a lot of that shit as a kid too.
My mom is a good cook, except it drives me nuts when she grills red meat especially ribs over charcoal.
She overcooks them and flips them over and over again instead of just of just once. So they're completely charred and also dry on the inside.
My dad for whatever reason doesn't know how to cook, and is completely clueless in the kitchen. I have given him instructions before and he doesn't know how to do even the most simplest of things. I don't understand how somebody who went to grad school can't even figure the most basic simpleton shit out. But I'm pretty certain he is autistic, or leaning on the Aspergers spectrum.

There is nothing to understand other than that the statement was ignorant. You haven't heard of it because it isn't a thing.

No but you have relationships with women.
Twas a joke kidos. As in I'm attracted to women because they're supposed, SUPPOSED TO, know how to cook. But ofc it doesn't really ring true in modern times. I had to teach my last 2 gfs to cook. :l

I've enjoyed a lot of my boyfriend's cooking, I don't think I've ever dated somebody who was a bad cook or didn't know how to cook. Maybe I've just gotten lucky.

BTW, how do you guys cook those thick-cut pork chops?
I don't cook pork often, but whenever I do I buy those thin-cut chops, because the thicker ones come out really dry.
Are you supposed to do something to make it tender? Are you supposed to braise it or what?

Also, why do people eat canned green beans?
I can understand using canned for things like corn or beans, cause that takes time to prepare raw... but raw green beans, you can just sauté them for a couple minutes, same way you would make the canned green beans, and they come out fine.

Her noodles are indistinguishable from the broth.
but I eat it up with a grin on my face every time.
my mother had cooked a pork loin in a crock pot one day, of course there was some liquid it in, and like you said, it sucked the moisture out of my mouth, I told her it was dry and she said "it's moist enough to me" I responded, that just because it's wet doesnt mean it's moist. her attempts at what she called pepper steak over the years was no more than throw everything in a skillet and cook it until the peppers were a pudding like consistency

Good cooks don't follow out recipes or use precise measurements. They tend to have a feel for things, or do it to taste.

it's usually boiled in the brine from the can. I dont believe that sauteing canned beans will work out well
I actually worked in a restaurant where the owner was serving 32 different vegetables, nearly all of them from a can, they took over a restaurant that was failing for that very reason. they changed the name but kept the menu and I tried for the entire week that I worked for them to change the menu and even gave them 3 good menus to start, 2 keep the 'country cooking' theme, now why people actually want country cooking when they go out to eat in the south and why the fuck would they want a selection of 32 different canned vegetables
the place only stayed open about 2 months because they honestly believed taking over a failing business model. the biscuits were always fresh, the bacon, eggs and sausage sat under heat lamps. one of the conversations went:
Pris: "Margret, Pappy. you guys need to get rid of about 3/4 of this menu, you only need about 6 vegetables and they need to be fresh, you can add a couple of others into rotation as a part of a daily special"
Margret: "Pris, those 32 vegetables are what keeps people coming back, they want those choices, they want the fried balogna and the streak o lean"
Pris: "Margret, look around you, how many people do you see in this restaurant eating any of those vegetables. you cant run the same shitty restaurant with a new sign and expect people to actually wander into this place unless they're lost"

Professional chefs usually say the same thing, notice how none of them use precise measurements either. I think the only time I measure something out is when I need a precise amount of water for cooking rice.

Actually it goes both ways get it? Ok, not the best joke....
Anyway, i believe the stereotype works both ways.
I believe people who are good at crafting things (like carpenters) are good at cooking. I believe there is a correlation.
Another stereotype of lesbians is they make good carpenters/laborers (some of them).

Twas a joke kidos. As in I'm attracted to women because they're supposed, SUPPOSED TO, know how to cook. But ofc it doesn't really ring true in modern times. I had to teach my last 2 gfs to cook. :l
Do you think we are reaching an age where women might not be as expected to cook as much as they once were?
Man since when could women not make sexist jokes against their own sex?
If course they can. I am cool with that. I apogize that I didn't get your joke and was rude. Would you please answer my question?

My parents/grandparents were all raised on amazing southern cooking. Except my dad but he just didn't cook much.

My mom is a fantastic cook. Me on the otherhand, I can cook well but only if I put my mind to it and am not lazy or taking recipes as suggestions. I'm trying to be more frugal and eat more home cooked stuff - this week is kinda sucky because I'm sharing an apartment with someone I don't know(airbnb) I've got kitchen access, and the girl who's hosting is just lovely, but I don't wanna mess up her kitchen too much and take up too much of her fridge space.
My mom makes ice cream from scratch, always uses the best freshest ingredients, buys locally farmed meat and produce - she Sicilian and her side of the family has a multigenerational Italian Bakery not far from NYC, I think you'd be hardpressed to find better cannolis in the northeast - I'm a bit biased, but they've been open and supremely popular for about 60 years now.
Finding fresh, local ingredients that you don't have to pay completely out the ass for in the city is a chore, it's not impossible, but if you really want to stretch your dollar then you've got to buy different things from different types of grocery stores/markets.

I think I remember you saying you burnt two lasagnas once and were starving . On a different note : I hate cleaning,I love being in a relationship, I can start cooking more because it's socially acceptable to say " I'll cook you clean?" . Can't do that shit with anyone else in your life as an adult.

oh god, that was valentines day iirc. I burnt ONE lasagna and flooded the kitchen floor trying to defrost chicken(...in the sink...with warm water - there was nothing to eat other than that).
I told you, I have to put my mind to it to succeed.
My best friend was raised by her grandma and she is super pushy in the kitchen, literally every time she comes over to hang out for any good while, she brings a bag of groceries and cooks food for everyone(I have seen her do this at other friend's places too), when I try to cook in my own kitchen I get shooed out - but I also accidentally fed her soapy pancakes once(I was washing the dishes, mixing pancake batter, and smoking a blunt, turns out this results in..mistakes) and it made her a little ill, so at this point I do the dishes and she cooks and that's just the way it is.
We're trying to move in together by the new year because we operate pretty well as a team with household duties.

My Dad didn't cook much. He could grill fine on the rare big cook-out with his friends, but very infrequently. My mom on the other hand is a great cook. She has some different tastes than I do, presumably from her childhood and growing up in a poor area with pastrami and pot pies as a treat. She likes very well done burgers and grilled pork chops, yet pork loin a juicy medium. She cooks chicken exceptionally well. Has a ton of cook books and written recipes, and still tries out new dishes cooking only for herself today.
Fresh corn doesn't have to take any time to cook, it tastes better microwaved in wax paper than it does from a can IMO. The strings from green beans bother many people. I don't mind them whatsoever, but I'm assuming that's a perk for some people opting for cans. I just put them in a covered pot with onions, potatoes, and/or pork and simmer.

Yes. Yes.
Still I was spoiled by my first gf. Good southern cooking. I gained literally 100lbs with that girl. I prefer to cook healthier meals these days but I can definitely stir up some crazy junk food. Have you ever had french fry crust hotdog bbq pizza? It's amazing.

This is so true. Authentic southern food is fried with lard and seasoned with fatback

Her noodles are indistinguishable from the broth.
but I eat it up with a grin on my face every time.
my mother had cooked a pork loin in a crock pot one day, of course there was some liquid it in, and like you said, it sucked the moisture out of my mouth, I told her it was dry and she said "it's moist enough to me" I responded, that just because it's wet doesnt mean it's moist. her attempts at what she called pepper steak over the years was no more than throw everything in a skillet and cook it until the peppers were a pudding like consistency
gawd, gross! I guess part of it is that they don't mind their own cooking. No motivation to get better. Then they get stuck in their terrible ways of doing it so it feels right to them. Also, a lot of people just don't value the art of cooking at all. Then there is the American way of being motivated by being good at something. So having people tell them they are bad at cooking makes them want to cook less, since we all want to get amazing at something we are naturally good at, to prove that we are somehow exceptional individuals. Sorry, I can turn any conversation into a discussion on philosophy and psychology.

my mom is 73 now, she's probably going to live another 20 years, my mom started saving plastic bags and the paper egg flats and broken small appliances. I've been trying to break her of this crap. I've been trying to cook, my brother comes up and cooks now and then, he thinks he's a good cook, he cooks like my mom

some dont ever wake up to realize that what they cook and their parents cooked is just bad and because they believe it's good they never really try to change it. I think mostly it's that many people just dont understand or cannot grasp good, basic techniques. they dont know how to conceptualize how a meal should look or it's flavors or what sort of textures can make it great.
I think some are also hampered by fear. they're afraid of under cooking something so they ruin the texture and flavors by overcooking it or screwing it in some other way

I used to love my moms cooking when I was a kid, once I found the world of spices, I because started to Cook for the family needless to say at our gatherings. I feel bad when people want to make something but everyone else is all like "let SuperFly cook it."
I love sautéed garlic and onions. Use them in almost anything and everything, just makes food taste so much better. As I'm cooking I'm all like
