yeah you can flip your sub, mushrooms have no problems with that IME. flip it while the bottom pins are still young and just about an inch tall.

I have the same thing going right now, I was lazy and didnt line my clone testers
Usually I use thick plastic drop cloth roll as liners. Its a big roll of thick plastic you can cut to size, and its clear. It makes it easy to lift subs out.
If I need to flip a sub, I hold the lid up tight against the surface of the sub as I flip it

I've had a few slightly contaminated BRF jars lately, let them sit a while, and they Grow mushrooms inside The jar.
One thing I've really noticed is man they absolutely take every drop of moisture from the cake. The cakes are light as a cracker after an invitro harvest IMO.
Aside from asthetics, it almost seems reasonable to fruit in the jar. Every jar I let do it's thing inside, always gets me 3.5-4 grams dry easily. Sometimes my cakes do not put out the strongest flushes. But you can just fill the jar with water, let sit a day, drain, forget for a week, and come back to huge mushrooms.
Also noticed invitro mushrooms grow MUCH faster than not. A small pin, in my experience, turns into a huge mushroom in three days tops.
Kinda drunk sorry. That was fun.

I seem to get less side pinning by packing the substrate a little harder with my finger tips around the edges before I add the casing layer. I haven't used liners in months cause I'm lazy but it's working out

I know a few folks who get really nice even growth across the surface without liners, they all have thier little tricks. I think a real level surface was one I heard
I think the main thing is to provide really nice conditions on the surface
