Afraid I've Let My Grain Soak Too Long. Need Advice!

Hi All,

I'm new to the community but I have several successful grows under my belt at this moment. I am really enjoying the bulk growing method and have increased my yields every time around. My current predicament is that we had some really warm weather over the past couple of days and I think that coupled with the fact that I let my rye grain soak about 12 hours past the typical time (that's after the initial simmer) than I usually do,  which caused my grain to take on a pretty sour/fermented smell. I went ahead and loaded into my jars and am PCing right now in hopes that the pasteurization will kill whatever has started to grow. I have 27 jars loaded and it would be awesome if I didn't have to start over. What are your thoughts? Ask me for more details if needed. Thanks! Oh, and a quick breakdown to help clarify:

Soaked dry rye grain for 16 hrs in room temp water
Drained and rinsed
Filled pot with fresh water and the soaked grain which was brought to a boil and then immediately dropped to a light simmer for 15 minutes.
Turned off heat and let soak in same water for 30 hrs (12 hrs longer than I usually do)
Drained and rinsed and let strain for 4 hrs
Mixed with gypsum and lime and laid out to get rid of excess moisture overnight (this was last night)
Came home from work to the grain smelling like it had started to ferment

*as stated before, the only variant in the above process (which has never failed my past 10 grows) was the ambient temperature and the amount of time I let the grain soak-post simmer.

I know my tek is strange. I think I intentional don't follow recipes exactly because I love problem solving and finding my own way to do it-a way that works for my patience level, attitude and environment. There are too many boxes to check, too much paperwork to fill out and too many laws to abide in the world that I like having a hobby to just flow with and go at my own pace. I definitely appreciate all suggestions and take them into consideration.

Just looking to see if anyone has rectified a similar situation by PCing.

Edit: I'm done PCing and the rye grain smells and looks exactly like it has all of the other successful times I've done it. I think I'm going to inoculate half of these jars and create a new batch for the other half. Just to see. Can't bring myself to throw away $60 in grain.

Watch the grain prep video of the lets grow mushroom series on YouTube. I've never heard of anyone doing grains like you.

First might i say what the hell. Second fermetion is normal if the jars are to wet then your sterilize grain in the pc it should kill most things. Ive soaked for a week and still worked just make sure to pc for 2.5 hours instead of normal 2

I usually work with millet so I don't have very much experience with rye.

That being said since you have already decided that you're using the grain I would say you should post back and let us know how it went.

Also you might want to simplify your tek a little. If you're simmering your grain, all that soaking is completely unnecessary.

BTW I always just toss my grain if I have left it too long because I have learned the hard way it is easier to throw a couple dollars in the trash than to spend hours upon hours trying to force success from less than ideal conditions.

I don't know why you made up a grain TEK rather than following one that's been honed in and proven for years and years.

for rye, rinse till you get clear water. put in warmish water overnight. then simmer it until a few burst. do not boil it.

then let it dry before loading and sterilizing.
