Yea you can shake em i think.
May i ask, why those jars in there? A 12/12 ambient light would be better than total darkness.

Violets truffle tek said to just keep them in a dark place but I didn't know that lighting helps thanks for the advice.

Did it? I'm going to have to double-check that. Last I remember I posted about light on certain side exaggerating growth on that side and have recommended ambient light, well before I wrote up that particular tek.

Ambient lighting helps the colonization process. It doesn't have to be direct light, just not complete darkness. The result is a healthier mycelium that fruits faster when exposed to fruiting conditions.

AGREED!! i keep my jars in my china hutch in my kitchen(i have a big sliding glass door to outside) I noticed the jars in the front were going much faster than the ones in the back. so I started rotating there spots in the hutch and got much quicker overall colonizing times(by a few days)
all cycles of growth need light! take them out of the drawer bro. trust us.
