First of all I want to thank everyone who has posted and helped educate people on mushroom cultivation. I really find it to be a passion of mine. You guys are awesome.

I don't ask many questions here because normally I can find what Im looking for. But I have a few questions regarding cultivation.

1) Im have a few shiitake bags that are almost all brown with a few white spots, some of them have fruited in the bag.
    A) Do they fruit prematurely from the light exposure or is it just age?
    B) How brown do they need to be before I remove them. Some are brown completely with no pop corning and others are half white with pop corning.

I find that when I remove them from the bag before they are totally brown they either don't pin and fruit are they get mold problems fast.

2) When I am going for a second flush how long do I soak them? I have tried to soak 24 hrs and only get a block of trich. mold.  What Ive tried is after they flush I leave them on the shelf for about a week then remove them from the room set them in a lower humidity for about 2-3 days then refrigerate for about a week.
    A) Does this procedure sound correct?
    B) Am I refrigerating too long?
    C) Should I only soak for a few hours?
    D) How many flushes should I expect before problems?

3) I am getting awesome flushes from my first flush from the blocks. I haven't been taking them out of the bag until I see actual pins start forming then I refrigerate for a few days then I smack the bag a few times then take it out of the bag and place it on the self.
    A) Am I waiting too long or is this more about preference?


I am asking these questions because I have read information regarding cultivation that I have tried that ended up giving me bigger problems. I apologize if the grounds here have been covered but I have spent a lot of time looking for a solid answer and have had conflicting answers.

That's a lot of text!
In vitro pins can occur at any time during incubation. There are many reasons. If it's over incubation (3 months or more) it's normal that they start pinning. If so just get the block out of the bag, pull the mush off and put it into fruiting. Other reasons: IME contaminations by bacteria provoke early pins and a sudden drop in incubation temps.
Blocks should be brown and pop corning. If one of the two conditions are not met yield will be poor. Incubation time is between two an three months. If you don't have any contams yields should be correct, even if you get them out after just two months. A lot is strain depending though. I'm growing a strain that likes to sit the whole three months. And when it's exposed to oxygen it explodes.
