What happened?

Okay, so the mushrooms shown in the picture had no color, then when I transferred the cake to my zip lock bag fruiting chamber they immediately turned this color after seconds. What happened? Is this a contamination or is it bruising or what

If it just " appeared" after handleing its a bruise. And it looks like a bruise, and its a bruise. Breathe easy.

Get it out of the choke bag it needs constant FAE and misting when dry so as it evaps it can stimulate pinning Make a sgfc youll get better results or at least get some holes in the bag it needs air

Lack of FAE will certainly cause problems with pinning and there is a high possibility of getting cobweb mold if the humidity is too high (as yours is).
And that is just bruising, nothing to worry about.
But seriously, make a SGFC.
