Yep those are chanterelles, the forked gills and white flesh are good indicators. They look a bit soggy, I would dry sautee them and get out the moisture before you add any oil or butter. It concentrates the flavor and makes them less slimy feeling.

Hey D. right on! I was quite positive of the ID thanks for the confirmation, they grow in my yard through the moss under tall trees. Several other edibles I have found throughout living here. Some coral some oyster.
I want to serve the chantrelle with a filet of beef and roasted vegetable. What maturity of mushroom should I look for? They are flushing heavily right now, I've only picked up the ones that have fallen over on their own.

I would say the ones that you have there look like they are at the perfect time for eating! I just made a cream of chanterelle soup that was mind blowingly delicious and easy to make but I had to use store bought chanterelles since they are out of season here. I would imagine they would go well with a filet just remember that they have quite a subtle flavor so they are easily overpowered by other flavors so use spices and siuch sparingly.
Good Find!

Haul,
Link me that recipe friend, here in N. Alabama I expect this to continue for a good few months.

Thanks again
P.s. tell me there is white wine involved haha, it clashes with the beef but I know that's a popular match!

Hell ya theres white wine! I envy you man it's so dry out here i wont be seeing those guys until probably november
Here's that recipe the only thing I would change is to dry saute them before you add the oil and onions and garlic and then save the juices that come off and add it with the cream at the end.
