Why do people say "you know" so much?

First off I'd like to say that I'm guilty of it myself more than I'd like to admit. But anytime I'm watching television, and someone is getting interviewed live, more often than not they're one of those who use "you know" to fill in every blank space of whatever it is they're saying.
For example, I just saw a live interview at the Olympics -- they were interviewing a US chick, and it went like this:
"You know...we just played hard, and you know, our opponents were really strong, but you know, we just rose to the challenge...because you know, we knew that we had to give it our all in order to win. So, you know, I'm just so proud of the team, because we've worked so hard...and you know, I'm just so happy right now...you know, ummm, you know...I can't even put this into words. I'm just so proud right now."
And the other day I was headed to the store and had it on some random news radio station where some city politician was being interviewed, and I swear he must've said "you know" like literally 100 times in the span of 5 minutes. It's like he didn't even know he was saying it.
But there are just two of countless examples, whether or not it's on some form of media on just in life in general. I always pick up on a serial "you know" dropper these days.
How long has this been going on? And why?
Now I notice myself saying it at times and always facepalm myself in my head when I do so.

thats a good question, guess it's jus one of those phrases people use to fill in the blanks when they're thinking and don't want to abrupt the flow of conversation
I say "fuckin" a lot, even to complete strangers.
"Uh yeah can I get a fuckin cheeseburger an uhh fuckin like a chocolate shake with that too"

While you're trying to think of the right words for what you want to say, you default to that as a "silence filler" because long pauses are not desirable in a conversation. Same goes for "um" and "uh" and plenty of others. My default is "fuckin".

Why? Be cause they have not grasped how to speak properly and get nervous when talking to people. I learned how to speak in a proper way at a fairly young age, excelled in english/spelling/reading. When a lull comes up in conversation it is ok for it to be silent for the moment it takes to complete the thought for translation/speaking. I have used like, you know, umm, and uh and some other forms of grunts/language when I was younger but learned very quickly this makes one look like a dumb-ass, uneducated, and/or stupid to a lot of people.
I learned to not do that from older people or just watching reactions to it when other people used it. I learned it wasn't very socially acceptable in most situations involving peers/authority or anyone who likes to converse in an intelligent coherent manner. It seems like people do it more when they are nervous and/or speaking in public in small to large groups.
Some people may not want to look like a "dork" or a "nerd" and default to some kind of "urban hip hop street lingo" or some kind of "cool" speak to show they are in with the crowd they are hanging out with. Then there are the people who keep perpetuating bad English and improper grammar, and I can not stand it! If I hear one more person say "my bad", or "baby mama/daddy/bump" I swear I'll scream! WTFH is wrong with proper English, syntax, and grammar???

I actually never say "you know" during a conversation, but I have a bad habit of saying "what" to people, even though I heard what they said. Know what I'm sayin'?

I say it because I'm from New Jersey and it's usually accompanied by "what I mean", among other common metropolitan area-esque 'sayings'

i literally only say "you know", in that sense, if i am trying to get the person i am discussing something (whatever) with can engage themselves a little more in it, and this is usually done unconsciously. perhaps i take the subject more seriously, and thus overcompensate slightly.
