What am I doing wrong? - First time and first bulk Psilocybe Cubensis Ecuador

Boring not relevant to my question, skip to the second paragraph: So I tried shrooms 3 months ago, from a guy who is growing them comercialy. It changed my life, and I decided to open the eyes of at least my close friend circle and people who I love. The guy is the only shroom dealer around here so he's not cheap, I ended up spending a lot of money on shrooms for my friends (only one paid me back), buying 5g for each of them. So I started looking on reddit about how to grow them and decided to start growing them on my own. As I saw it, the hard part was the sterile part, but I'm a surgeon in training so I knew that was the easiest part for me, I got the materials and the knowledge to stay clean. I wanted to grow enough for microdosing for at least a year (not constantly, but I made the math of a year of microdoing), and enough for me to give 3-5g trips to whoever I want without worrying about if I got enugh. Around 150 dry grams is my goal. So obviously bulk was the way.
What I did, so you can tell me where are my mistakes: 1- Used the PF-Tek for the cakes: Verm+brown rice flour. Using some Psilocybe Cubensis Ecuador, from a trusted vendor.
2- Waited until fully colonized (No signs of contamination)
3- The first of August, used the bulk trays tek by Willy Mico from youtube but instead of poo I used Coir (80%)+ verm (15%) + Cofee (5%). 4 inches deep of intercalated layers of coir and crumbled cakes (I crumbled the cakes with my hands into small pieces, like cottage cheese or grind meat). 6 trays in total.
This coir is not the one you get in the states, this one is a little more raw, with bigger pieces, and is not compacted, so I don't know if that's part of the problem.

For the coir I used this video tek:
The substrate was moist and ALMOST driping.
4- Left it for a week covered with foil in a closet, to colonize.
5- The 8th of August I took them out of the closet and put them in my fruiting chamber.
Fruiting chamber (Picture 2): - Galon capacity unknow, but is big enough for my 6 trays. - Holes every 2 inches on the side faces and the lid. - At that moment (8/8/2016) the container had an translucid orange lid, but the window let enough light in and the sides of the containers are clear.
6- I left my fruiting chamber with the 6 trays next to a window, where it got indirect sunlight
7- On August 13 I did a mod to the lid of the container, and added a light diffuser, and also put a 5000K CFL light on top of the diffuser, closed the windows. And started spraying the sides of the container with clean water every two days, because I wasn't seeing much condensation on the lid, like in the first days.
8- On August 17 I started to see some growth in some of the trays, three out of six to be more precise.
9- Today I harvested the first two little shrooms. The partial veil (I think it was the partial veil) was broken but I didnt saw any spores. There is some grow of all of the trays, like 2 little shrooms per tray.

Is this normal or am I doing something wrong? Do I got to wait? I saw some grow logs and the average time from the first day of fruiting to the first true grows was like 14-18 days.
I included pictures of everything, if you see something wrong please tell me.
Btw I live in the caribbean, so the temperatures and moisture are perfect for the cubensis.
PD: For my goal I also have 2 containers with a Straw Tek wich I started a week ago.

Well thanks for stepping up and paying just remember you can't take it with you when you die
But TALLYHOE! lol but for some reason those trays just look off to me... But on the bright side I think I seee pins so just keep misting and fae and BE PATIENT ! equadorians have made me wait a couple times longer than I thought well then again I think everybody has that moment lol and good luck keep us updated

Btw I've always had bad results with coffee unless pc' d

My guess is the coir is at least part of the problem. Given it's less dense than the bricks you see normally used, it looks like it didn't absorb enough water and things are on the dry side. Maybe try spreading your trays out amongst a couple SGFCs, give them a good dunk, and throw them on some perlite. I'm sure a TC will weigh in here shortly.

It didn't bother me at all that no one paid, but I have a list of people that I think would benefit from trying them, and it would be too expensive if no one pays .
Ok, no coffee for the next one.
I'll start a log with the straw one, as soon as it gets fully colonized. And will keep updating this one.
Also, is it normal, to get some individual grows before the "real" one?

Some chunky coir you got there. Might be ok. Only have experience with bricks, so really couldn't say with certainty. That video is funny as shit. The kid damn near cuts his fucking hand off cutting into that brick of coir, and THEN puts it in the bucket of water. I know he only needs half of it for his recipe, but still, just use the whole thing
The oven bags are a hoot too. I think what you are doing wrong is using that video for a reference. As far as your setup, the poor performance you are experiencing could be from a contaminate, and or, from poor fruiting conditions. If you already live in a tropical climate, it might be worth looking into fruiting outdoors. Finding a spot where they wont get fucked with or noticed is easier said than done for sure.

Like anything else there is a learning curve with this hobby. Congratulations on your success, a lot of first timers don't see any fruits so you are doing well.
In the rush to harvest a substantial yield a lot of people forget that it is quite easy to harvest 14+ grams from one brf cake. If all you're trying to do is get 150 grams to put back for headstash there is no reason that you couldn't achieve that just as easily fruiting your cakes as cakes.
You may want to try fruiting out a half dozen cakes on your next run alongside your bulk trays. Just make sure you dunk and roll them.
It's good that you're ditching the coffee from your mix. I might recommend that you increase the amount of verm in your mix as well. I usually use more vermiculite in my bulk substrate than any of the teks call for, but that's just me.
