Rye berry spawn contamination

I grow BRF cakes once a year, and my current batch of cakes have pinned and are doing very well. But this year I ventured to make a couple of jars of rye berry spawn to try bulk substrate. It didn't work out. I left the jars for a month in a relatively cool place and they were colonizing nicely, but instead of consolidating and forming one solid piece like granola that you would break up every week, at the bottom of the jars I could clearly see the colonized mycelium but in obvious liquid form.
I thought I made fairly sure when I filled the jars with the berries that there was no excess water or moisture and certainly no more than field capacity. Was I wrong? I followed sterilization and cleanliness procedures. I used Tyvek and ran alcohol around the rims and the lids.
But when I opened the lids and sniffed, Jesus, I almost fainted. So does anybody have any tips on how to avoid this next time? Thanks.

I pressure-cooked the jars and lids, boiled the rye berries for 10 minutes, drained them and left them for some time. I filled the jars, punched some holes in the lids, sprayed isopropyl alcohol on them and used tyvek to seal, which I also sprayed with alcohol.

That is guaranteed fail everytime. You are not even close. The lid must be premade, preferably with a filter better than tyvek, and pressure cooked at 15 psi for no less than 90 min. The grain inside the jar cannot be exposed to open or unfiltered air ever. You need to do more reading.

By the sound of it this guy might take it the wrong way if you don't mention you have to put the grain inside the jar before you PC it.

I watched RR's video and he boiled the berries for 10 minutes and then drained them. That is what I, in like manner, did also. So should I have boiled them for 10 minutes, drained them, and then PC'd them? Maybe I spaced on that step. Please confirm. In any event, what accounts for the contamination? Is 10 minutes of boiling not good enough for rye?

If you sterilize grains in boiling water, the act of filling your jars with this grain will introduce contams that are in the air, while you are pouring this shit up. The purpose for simmering your grains is for perfect surface moisture of the grains.... NOT for sterilizing the grain. You PC after you have loaded your jars.... and thats what sterilizes everything.
Also, alcohol disinfects, it doesn't sterilize.
EDIT: Also, field capacity is whats used to describe the moisture content of sub not grains for spawn (coir or hpoo for example).
