Trashymushroom smell from amonia grain

So at the end of June I prepped some WBS and let it sit in the bag for too long, about a day. This resulted in a ammonia smell in the bag, kind of like it was fermented. I decided to PC the bags anyways, about 2 hours at 15 PSI, and inoculated the bags with different strains of mushroom. The bags have been fully colonized for about a month now, but when I was mixing up the grains I noticed a strong trash smell and realized it was coming from the bags. The thing is the bags show no sign of being contaminated, and also have an mushroom odor as well. The grain is mushy is parts though within the bag. The shiitake smells the worst like trash, but the reishi still have mostly a fresh mushroom smell. The maitake is in between the two. What do you guys/gals think? Use or dont use?

Shiitake smells almost like shit if your not familiar with the smell. Extremely pungent odor and brown liquid when birthing bags. All the mushroooms have there own smell, like gold and pink oyster smell horrible.

My sense of smell is totally shot but I find shiitake to smell quite pleasant myself.

My pinks smell great, and the goldens are super spicy scented. Now old Lion's Mane myc smells like rotting fish, and that juice just doesn't wash out!

I've never found oyster myc to smell unpleasant....to me they kind of smell like vanilla. Someone told me oysters are sometimes used to make artificial vanilla scents.....not sure if this is true though, couldn't find anything on the web.

vanilla or anise depending on the species.
Oyster fruits don't smell that great though.

if it smells bad you have bacteria in there. try shaking your jar, if it gets all liquidy like you have a problem and the myc will have trouble growing back. If there isn't a problem all will be well.

So when I first made this post I had mixed the grain so you couldn't see the mycellium just moist grain so I decided to wait to see how it would recover. As far as smell goes, none of them have that trashy smell anymore, just pleasant mushroom when I squeeze the bag and smell through the filter. Here's the pics...

These recovered strangley and just spread on the bottom and started up at a very slow pace as you can see.The strange thing is I mixed it evenly and the first spread was top to bottom.
