Here is what you need to do OP, copy the signature off the check and make thousands more. Like at least a thousand.
Once you have a giant bag of checks take them into a bank and dump them out then go straight to jail, do not collect 750$

Call the guy the check is written out to and tell him you have his check for $750, and that you'll mail it to him for $500. You get $500 (legally), he gets a check that's two years old.
Change up the amount you charge him for mailing him his two year old check based on how gullible he is.

check wouldn't be valid and even if he was all he'd have to do would be to call the company and they'd have to legally reissue him one. Actually I've had employers send me checks by mail multiple times(when I was a server so it was nothing too exciting amount wise) that I had never cashed, then I forgot about it again so they handed it over to my state treasury department and I checked the treasury website(EVERYONE should do this btw a lot of unclaimed money is floating out there and you be surprised that you are entitled to $ from something or other) and I finally cashed my 60 dollar(again...waitressing) check like four years later

Yeah I'll totally give you 500$, mail it to my house, my address is 308 negra arroya lane NE Albuquerque.
And so the check is mailed, the original owner pays op and we all live happily ever after.
in reality the check gets deposited and op never hears from him again
the address i listed was walter whites from breaking bad. Idk why but as i started typing it i heard him saying it in my mind decided to use it for an example

An asshole should always be treated like one. That's how karma works. You would be violating the laws of the cosmos if you didn't cash that check if you safely could. F that guy.
