Issue with nesco dehydrator

I love my new Nesco, esspecially after using an Eastman Outdoors for so long. However, I had a problem with it today. I was drying aproximently 11 grams wet @ 52 Celsius for 12 hours. I checked them about 6 hours in they were feeling pretty dry but they hadn't shriveled yet. They weren't cracker dry for sure. I let them go for the next 6 hours and checked them again. Most of them were shriveled and crunchy, just the way I like em. Unfortunately, there were about 3 fruits that didn't seem to dry anymore than they had @ the 6 hour mark. They are bendy and flexible. I sealed them in a separate container from the ones that were dried to perfection because I didnt want them to rot away my good ones. I was wondering if this is a common Issue? I live in a humid area should I have increased the temperature because of that?

75 degrees Celsius should be your sweet spot.

Individual fruit dry times will vary slightly depending on size, moisture content, etc. If you suspect your heating element is faulty, place a meat thermometer inside of the unit and see if the temperature reaches the setting on the dial. Look for fluctuations and anything that would indicate the unit is faulty. I use my NEsco Dehydrator on the highest setting while drying fruits. 71 Celsius.

170F highest setting turn it up. Makes no sense to use a lower setting than max

You want to take those shrooms out of their container and put them back in the dehydrator until they are all the way dry. If it takes an hour or twelve hours to dry them they won't be dry until they are Also you might want to go ahead and turn that heat up.

Thanks everyone, I'll definitely be putting them back in and it seems like everyone thinks turning it up it a good idea so I'll do that also! I appreciate the advice.
