I've got some no pour agar wide mouth jars that I won't be innoculating for a week or more. Is it OK to keep them out or should I refrigerate? Does it matter either way if sterilized?

You can do either. Hard to say which dries them out faster. If you do unmodded plastic lids on your no pours you can store them a bit longer.

That is way too thin. It becomes hard to work with but it the mycelium doesn't care how thick it the agar is. Slow growth is likely due to genetics.
