I use the metric system a lot when I bake because I weigh everything out. The metric system makes so much more sense for me in the kitchen. So I pretty much measure in grams for everything myco related too. I kind of switch back and forth though. Sometimes I just need to measure an ounce because it's pretty standard here.

That National reminds me of going to my grandmother's back in the day to hull peas while she canned them. Man that was some good eating.

So, I've never really been clear. Is myc on a plate reaching for the air as it grows out a problem? Is there a hidden contam when the myc starts puffing up like cottonor is it just morphology?

If it's mycelium It's not a problem. That's just aerial mycelium which is a very good thing. It means microclimate is in good order to the point where mycelium is able to reach out into air and be healthy. If it's bacteria, it's a problem.

It looks like myc. Could it be both?

Anything is possible, so it could be, or it could be one or theother. Aerial mycelium, and bacteria have completely different looks about them. Pics?
Munch has a good thread called aerial myclium vs bacteria.

It should work. I think the dme stands for dry malt extract. I could be wrong though.
