Thanks, my stove actually turned off 40 min in becuase of the thermal fuse I think, it does that sometimes so now I´ll be up for an hour extra lol but I´m going for 90 min at 17-18 PSI. But I´ll definitely try 60 min with a few control jars another time to see if they contaminate before opening the lid.

I do 2+ hours.
11 hours doesn't work tho
 I inoculated the 11 hour grain the day before the 2 hour grain. With the same LC. Thats the colonization difference. Neither jar were shook.
Funny 3 of 10 of the 11 hour sterilized oats didn't even show growth at all. And thats with 10-15cc of LC. And all 10 of the two hours sterilized oats finished in 1 week with no shake from 10-15cc of LC

My guess is that burnt grain must not be very palatable for myc, something in burnt grain must inhibit myc growth. I also trashed some jars in the past that were taking forever to colonize due to extended pc times and they felt moist.

But this does apparently not happen when steam sterilizing for 10h? So prolonged 115+ temps damages at least oates to unusable wonder at what time they start to go bad..

Thanks ham, I will glue an extra coin onto the weight to go from 17.5 PSI to 20-22. I will try 60 min at 20 PSI next time

All this talk about the relation between pc times and temps made me rethink things that I took for granted, like extended pc times can dry out the grains. Maybe it isn't that, just didn't think it through. Mateah also has a point about steam-sterilization, it's not unheard-of to steam-sterilize grains for ~24hrs, I think some farms do that.
Another example comes to mind. Many people here say that you can't pc LME for long without caramelizing it. My experience has never been that, I accidentally pc'd LME for more than hour under 15 psi on one occasion and I didn't get caramelization. However I did get a shit ton of caramelization when I sterilized it for 30 minutes at 20 psi.
Gotta do some experiments and shit yo. Grains pc'd for 1 hour at 30 psi versus grains pc'd for 4 hours at 5 psi. Wanna see if one of them acts up, or both.

I can't wait till I have my op rolling along smoothly so I can experiment more. I'm not at a point where I can deviate from teks just yet.
Once things are more routine I'll try experimenting, I'd love to be able to bring some useful information to the table considering how much I've learned from the community.

At least these TOC's look pretty decent. Do you think I could get another flush out of this by soaking it like usual and wrapping it in a gallon ziploc? My stupid shoebox is still being lame though. Sigh. I think I'll harvest and set it up for a second flush. The caps are starting to open so I don't think they'll get any bigger.

Maltose is the majority component of malt extract.
Here's typical malt extract

The pH of malt extract is in the 5.2-5.6 range usually. This doesn't really speed carmelization. And fructose is the only sugar that is effected by sterilization temperature.
