You should swirl it around to get an accurate reading with IR You want to do that periodically to homogenize the temp anyway when heating agar or cooling it down
Using 117F wont kill the bacteria or set it back 140f will. And only will harm the mycelium not kill it since it cools quick enough

I read on here that commercial growers expand the shit out of their cultures when shipping to stores so they're too weak to clone.

Often, but not always. You could always try a clone grow and attempt to get spores or swabs to continue the lineage.

ya its hit or miss. if your grocer is like my grocer, they sell the kroger brand and a local brand. try your hand at the local brand first, its probably grown on a smaller scale than the kroger brand.

These are from small scale operations. No one sells at the farmers market here. Might be an opportunity

The small-chain grocery store I have up the street had some horrendous looking Oysters in there a bit ago. They're small-time though and sell locally picked Chanterelle's when they're in season and shit.

Yeah, I didn't mean they do this specifically so they're too weak to clone. I just meant by the time they've hit the stores, they've expanded that culture to it's limits for production. I'm going to try and get some wild mushrooms this year to clone. Super excited!

Crumple it up first, then lay it over your sub. You're supposed to replace it fairly often, because it gets soggy. I used to use wax paper, but I don't know how much benefit there was to it. I remember people using bubble wrap, and I think it was supposed to be better.
You should try an actual casing layer! I live in a very arid climate, and when I started using a casing layer, my tubs started consistently having amazing pinsets and beautiful canopies.
