Issue is precision cutting of an opening and making a lid that seals perfectly. They are lined with Polypropylene but that shits good to well over 300f. I was looking at these thinking about being able to heat water for steam for pasteurizing, maybe not this big though.

That seems very overpriced, there was a thread I saw a while ago that I can't remember the name of some dude who was a skilled welder in his spare time who made an ENORMOUS metal barrel into a steriliser, I think he could fit like 80-100 jars in it or something?
This makes me sad. What are you kids even paying attention to anymore?

What is needed is to do instead of putting a casing of bulk substrate materials on at full colonization is to put a casing layer of materials that the mycelium, or invaders won't want to injest. Such as vermiculite/peat moss/hydrated lime/gypsum, and increase fresh air exchange. Don't let that casing dry up either. Mist lightly for the sole purpose of keeping the casing layer slightly damp.
Placing the casing layer on, then putting the substrate back into incubation, so the mycelium can colonize about a quarter of the casing layer would be ok too.
I got some peat moss.Would be a good idea to mix it with just black earth? Before to cover cakes again. i got a last little bag of it and afraid that could be not enough before they bring more bags in the shop. Or better cover just like this ?

The black earth sounds good. Mix it with the peat moss at equal parts. Pasteurize it good.
Can you get hydrated lime, and have you heard of of "Jiffy Mix"?

Noc what up hows the new job that keeps your gracefulness away from us??? Haha
Aloha has a big ass sterilizer that can do like 60psi but the chances of us doing is slim and no need to i can do 60 qts a day witj 2 23qt prestos ... way more then enough thats 12 66qt tubs worth of spawn a day ...
Ive got into bags and it makes life much easier i can do 16 tubs a day with bags and not have to worry about cleaning 100 jars

Hydrated Lime (use agricultural grade) is simply an additive for casing layers in this hobby. Lime's only other use in this hobby is for an extra line of defense when pasteurizing wheat straw.
Hydrated lime spikes the PH of the casing layer so high that nothing really wants to germinate and, or grow upon it. Throw a little gypsum in there to help sustain the PH spike.
