16.5lbs of dry WBS get 2.5 ounces of hydrated lime. I did tests all over the place, this seems like a good amount. I also rinse the hell out of the seed. One rinse and agitation from a paint mixer... dump water, fill with new water add lime.... 12-18 hours (very little difference in water uptake with hours past 12) then 2 more rinses with agitation. I let drain for 15 minutes, then load. Thats 5 bags worth... a bag to a mono.
I drop a 1/4 deep pour soft agar plate into each bag. 7 day colonization.

But why are you using lime? Like what is it supposed to accomplish that doesn't get accomplished without it?

Not so much contamination as heat tolerant anti-fungal chemicals. I've isolated problems back to fermentation... problems caused by fermentation residue that survived PC'ing. The organisms that ferment create anti-fungal chemicals that are known to be heat tolerant. I was having bags that just sat there with my agar pucks, doing nothing, then I realized those were bags that I had set aside (warm) to wait until a PC was available. It was part of my workflow and it happened every time. I was stumped until I figured it out. Thats why my new move is to avoid fermentation. If you cook grains, air dry fast and load and PC all in one process.... theres no time for fermentation. But I hate to cook grains if I can just soak them instead.

Its a longer story, I'm too busy to write up a tek. I'm currently of the belief that seeds dislike a fungal takeover. And I believe they battle our fine hobby in three ways. Biological warfare, physical barriers, and chemicals. I'm playing with knocking these three things down a notch, and nixtamalization was one of the many things I attempted. Its the only one I began to have success with. I was having such fine looking bags growing out, that I began attempting an atmospheric barrel steamer, and 6 months in, my PC's have a layer of dust on them.

I am, but I think its only working because I'm playing a very delicate game... doing everything right. Its been a long road getting here.

commercial grows used steamers for a very long time and so have several growers here. its only economical way to do large scale sterilizing. Takes like 8 hrs to steam sterilize quart jars of grain or bags

What kind of steamer? Like this? https://www.homedepot.com/p/Hamilton-Beach-Upright-Garment-Steamer-11552/314215736
Steam without pressure only gets to 100Β°C. That's no problem?

time beats pressure.
thats why you steam for ~eight hours for quart jars.

Even for thermophilic bacteria and endospores? I was sure there were bacteria that survive booking boiling.

steam barely works... but if all your stars aline... I've been reading about it for years, and I thought I'd make a go of it, armed with my nixtamalization of the grains beforehand, and trying to do everything right. I'm of the belief that shit is never really sterile, so we all have success when our chosen magic organism is fast and vigorous. I colonize the WBS in 7 days or less, I aim for one big first flush. And I use millet (the majority of my WBS) because it can handle being in a steamer for 19 hours (bags are put into a pre-heated steamer). RR once said that it is important for a steamer to be hard boiling and swirling steam within, so I make sure to do that, at least until the center of the bags reach 210f. I've also noticed that the second a heater element has its power cut, the barrel turns into a vacuum, drawing in air. So I never do that. Power on always. No PID and thermostat.

it worked for them a long time. even with pressure our shit ain't truly sterile. overly wet stuff goes bad all the time. think that's why.

Its funny you say that, there a thread in my signature that is very important to me... looking at clean grain colonization. And then theres the no-prep thread by yoshi... My WBS gets loaded wet, and I think the exterior water makes a bit of starchiness - causing my bags to look a tad shitty at 100%. But the harvests are fine. I tested drying my WBS on screens, and the bags looked wonderful. Those two threads are kinda at odds with one another. I'm now realizing, if you cut corners like I am, you lose the ability to read your colonizing grains for bacteria, cause it looks so shitty from the wet starch.
Its not really the same thing as higher water content, which is what I believe what you mean - But it made me think of it.
