Field capacity is actually not an exact thing. You can use between 5-7 parts water to coir without noticing much difference at the squeeze test. IIRC p9 uses around 7:1 ratio

I keep mine like Rusty said bubbly and wet then start to dry more when pins start. I do think a lot of bubbles and moisture can cause more aborts like they talk about in that surface conditions thread.

I have noticed that it has some wiggle room. I never weigh my coir. Maybe I should? I just overhydrate and then adjust with verm. I havenβt had problems, then again maybe I have and I didnβt attribute it to the substrate.
