The species in Melbourne you're referring to is psilocybe subaeruginosa. This is a magic mushroom that grows on wood and fruits in autumn/winter in the cooler months.
The species that is most commonly cultivated and talked about on this forum is psilocybe cubensis. This mushroom fruits at higher temps generally in spring/summer.

Also, I wanted to ask if you think there's anything fishy about any of these pics of spawn.
And does the depth of the sub in these tubs look OK? I put 4 jars of rye spawn in with 650g (dry weight) of coir. I guess it would be about 27 oz of dry weight rye berries.
Looking for your full support on this one everyone! Thank you!

Hey, no one commented about your spawn yet so I will. Unfortunately it looks a little bacterial. And regarding your sub depth, I'm not entirely sure because I don't know the size of the tub, but it may be a little on the shallow side.
Regarding the spawn ratios, remember that they are measured with hydrated coir.
Yeah, I was thinking there was something up with that jar. But I wasnt sure if it was bacterial or if it was this... "Oils and starches from burst grains may appear similar and but will already be present at the end of sterilization whereas contaminants will appear later." From kizzle's recognizimg and dealing with contamination. I started with soaking grains overnight and the grains took much longer to colonize than my second batch of grains that were just boiled for 40 minutes. And dried longer before putting into jars. I'll definitely work on doing more transfers until I'm confident in my agar plates (I inoculated my spawn from the best looking parts of germ plates).
Can you give me an example of the coir to spawn ratios? If I were to use 650g of dry coir and add 2,275 H20 for a total coir + H20 weight of 2,925g, how much spawn would I mix in for a 2:1 ratio? I guess it would be 1,463g of spawn, but is that the weight of dry grain?
Also, FYI, I didn't use the bacterial looking spawn yet, I saved it for making grain spawn or throwing out if you guys didn't like the looks of it.

it really doesn't have to be so precise, 20-24c is fine. higher temps tend to accelerate the growth of molds and bacteria more so than they do for cube myc. we are not trying to duplicate erratic outdoor conditions, we are wanting to create a mushroom-growing paradise indoors within easily controlled micro-climates..... usually boxes of various sizes.

Cheers, this is exactly what I wanted to know. Ive just always called them gold tops. Now that I'm diving into actually cultivating mushrooms the amount of information needed to go from zero to a hundred is bigger than Ben Hur. Cheers

Thanks to normal person too. While I'm here, there dosen't seem to be any definitive stirring schedule for liquid culture once it has been inoculated. Some seem to stir it for days starting straight away, others say leave it till you see some mycelium growth and stir it 20min a day. What are the pros and cons of some common methods.

Don't over think things, you can let it sit without any stirring; stir for 1 min/day all the way up to constant agitation.
Labs likely use orbital shakers to keep the broth in constant motion but none of it is absolutely necessary, if you have a magnetic stir plate you can keep it on low. Do whatever makes you feel better about it essentially.

I saved some GSW to try LC. Any recommendations on a good TEK?

Yes. Save GSW for agar and not LC. You want LC to be as clear as possible. Just do .2% nutes. I like Karo, many people like ME

Iβve had lc sit on my kitchen counter in a baby bottle for a year. I just shake it every two weeks or soβ¦ itβs probably not ideal conditions but it works. I followed josexβs poke to make the baby bottlesβ¦

i think the paradigm is shifting to not really stirring LCs as much anymore. i know josex mentions just giving a gentle swirl every now & then but not much more. no real need to use a stir plate or marbles or anything to break it up ime. i left some LC sitting for probably like 3+ months & it actually formed a SCOBY like mass of myc on the top from not touching it for so long lol. iβll just swirl it occasionally if im checking out the jar but thereβs not a huge reason to worry about constantly stirring it up. but im sure everyone has their preferred methods

itβs totally like kombucha!! first thing i thought of when i saw it lol. it would be kinda cool to see some pins popping off the surface of an LC. im sure someone on here has a pic of it happening lol

This makes sense on a 200 gallon bag bio reactor. This is kinda wacky for jars of LC though.
A stir bar and a multi-position stirrer with digital speed control will do basically the same thing much easier and less chance of messing it up.
24/7 stirring is cool though. I've found many speeds work great. Just make sure your stirrer doesn't get hot and cook the LC.
But it's not THAT much faster than a daily mix for 30 seconds at high speed. I can stir 40x 800cc LCs on a single place stirrer in no time once each day and that's enough to nock up about 800x 5lb spawn bags.

dont measure by weight, measure by volume. Use myco quarts for spawn and full quarts for sub.

GSW has always given me weak growth so I avoid it, but I make LC broth with .1-.2% LME in distilled h20.

The above is .1%

This is my exact recipe. Before the myc grows out, do you ever have sediment or see a rosy tint to your broth? Thatβs how mine has been coming out.

Sediment and pigment free, I only see sediment when there's too much LME; the closer you you get to 1% the more the sediment accumulates, ime. I will get yellowing if I use anything other than distilled, so I always run distilled for all liquid media.
Must use a very light malt extract or you wont have great clarity.
I Use this:

Organic Light Dried Malt Extract... https://www.amazon.ca/dp/B00U9WRJDK?ref=ppx_pop_mob_ap_share
