Fuzzy on the bases. Is this from poor air exchange?

And where I cut seem pretty dark blue green. I’m colored blind so🤷♀️ Is this a good inductor on potency?

1) It usually means they needed more FAE, yes.
2) It's absolutely no indicator of potency. You can have bunk fruits that still blue.

When inoculating from agar, How big of a piece is needed? Or how many jars can you get out of one 100mm plates that’s fully colonized?

Any size piece you like. The bigger the pieces the faster the colonization.
Anywhere from 1/6 to 1/2 a plate is pretty common.
Some people use a whole plate but I prefer not to.

I do 3 or 4 pieces, at 1/4" round, per quart jar. I use a punch tool to cut my transfer prices

When I'm doing transfers, tiniest piece I can manage. For inoculations, I cut the dish into quarters and use a wedge per jar. But I also slice off the outside edge of the agar, because that's where contaminants like to hide. For everyone's amusement I made a terrible diagram. Blue and red lines are the two sets of cuts I make, one around the edge and then cut it into quarters.

 I do the same then add a tic-tac-toe pattern of cuts so there are several pieces in each jar for more inoculation points. I still use only half or a forth of the pieces per jar. And leave the outside ring in the plate. I just use the scalpel to scoop out the pieces I want.

Color doesn't seem to mater. Isn't about light, is about surface conditions. Liners prevent places where conditions are right for side pins. Double sided bag is said to be best. One side clings to substrate, other side can stick wherever it wants, nowhere or inside of SB. Trim the bag off on the top right above the top of the substrate or casing.
A casing or psudeo casing layer will help prevent them too, by making right conditions on top for pins. I use about a quarter inch of fine verm. I use medium verm for the substrate. You could probably also use medium verm for the psudeo casing.
You don't want sidepins because they pull resources away from the top.
Also they can rot. Sidepins can be smelly and slimy even when the top shooms are nice.

Yes its FAE. No it's not a real problem. And as Guerilla said, bruising color has nothing to do with potency. You had a rather average result. Be happy it wasn't a contam failure.

Over the years Ive done bottom watering of my monos in an attempt to recharge my substrate after a flush... and I measure the amount of uptake and it was always so little, like a 1/2 cup at the most. Recently I started to pour a cup of water down the sides of the sub when a large flush of my golden teachers are about 1/2" tall. It gobbles the water up in 8 hours. One sub took three consecutive cups of water throughout the growth until harvest. Three cups! gone! I'm amazed. And I've never run my coir as wet as I currently am. The coir at spawning isn't quite able to hold the water against gravity... its much wetter at the bottom of the hydrating bucket.
Finally having clean spawn is the fucking best. I can really push the wet...

I’d try and cut as many of those aborts off the sub without ripping up the surface and mist heavy.. much easier to quote myself here from another thread

Yeah definitely rehydrate that sucker. It's certainly not toast, that tub could pump out some more shrooms, you just need to rehydrate thoroughly between flushes. Mushrooms are about 90-95% water, so you can lose a surprising amount of water from the substrate in just one flush.
