Last time they were perfectly dry after a shake around, so it's possibly my G2G technique with bags why I'm getting mold, though I felt quite confident with my last run. G2G to jars no contams.
I usually dry for 15 hours minimum, often more.
One time I left 2 bags in the PC and they got trich like fuck.
I've got 6 sitting here (haven't shaken to avoid interrupting the seal, so some grains are still wet on the sides) gonna give them a couple weeks but it was 2-3 weeks before I saw trich on my last ones.
I've tried 4 hour soak. 12 hour soak. 24 hour soak.
Tried 10 minute boil. 6 minute boil.
Vent for 10 mins before adding the weight and never used a sleeve.

My guess is your technique. If it were bacteria I'd say the pc run may be off, but if youre seeing mold in your bags that have been through a 3hr run after noc up then I'd bet my bottom dollar that your technique is a tad sloppy for bags.
Scope the 2nd post in my bag write up. Maybe it will help you with handling bags during a g2g

This is rye right? I doubt you are getting the center hydrated, meaning the chaulky white part gone, or mostly gone. Maybe you are?

No, i pour in front of a hood. In my SAB days it was mostly G2G. I believe eat does this in his SAB. Maybe he'll chime in

Yeah sounds like it's your gig or your spawn. Lastly does your bag hold air or when you have them zip tied dp they let air out? I had an issue where bags broke in the corner and I couldn't see it. The easiest thing would be to eliminate the pc off the list by keeping a control bag.

I follow your tek and that 2nd post almost exactly for my bags, the only thing I haven't been doing is the filter patch facing the hood. Next bags I'm determined to get right..!

I impulse seal and have a plenum of air above the bag, never seemed to have leaks.
I see people using SHIPs and wiping them with ISO before inoculating, but I also see people advising against this as it's sanitizing not sterilising. What do you think? Baffled why I've been told not to as I see so many people do it without issues.

I'll let these bags go for another 2 weeks. I guess then I'd be ok? They've sat for pretty much a week so far.

Just do your normal thing but keep 1 bag on a shelf and see how long it takes it to get funky. It's sounding like you got bad spawn or bad sterile technique. If it takes more than 3-4 weeks though it's definitely not the bags.
Might want to spawn a jar to a shoebox and see if it goes green, that would point to spawn.

Fully colonized subs are quite resistant to contamination, where you want your focus (besides temp which can be a bitch to control, but low temp only slows down growth a bit as mycelium generates heat while using oxygen, just like you or I) is on fresh air exchange (FAE). FAE doesn't require filtering, enclosures are more for keeping parasites (fungus gnats etc) out not removing airborne spores.
And no you don't have to "dry them out" just let 'em ride.

I would try kicking the contents of the jar into a pile of moist wood mulch and let it do it’s thing. Maybe make a bed with it if you wanted to get fancy.

This is so over kill. You could mix spawn and substrate in an unmodded shoebox with a timed light and forget about it, it'll grow mushrooms. You're making it overly complicated and working against yourself. Read the current tek list and build a normal chamber instead of being an engineer about it. All you really need is clean spawn.

In this house had a bunch of problems.. gnats, coweb. 4 pre-made kits went all wrong. Let's see this time. This and a big oat jar is all I have now. Can't order nothing here.. totally forbidden.

none of that matters if you make clean spawn and kits are always a crapshoot. You're concentrating on the wrong things. Learn agar and get a space you can actually do some work in. Clean spawn is probably the most important thing you can accomplish for a good grow. Cobwebs and dust are not going to hurt a tub as long as the spawn was clean and colonized.
What do you mean by, can't order supplies because it's totally forbidden?

Why overkill? This is a temporary situation for me, I start to work-travel again and then what? The system will work.
I've read the teks. Read all about the failures to fully automate the fruiting process.. yeah it's a challenge but it's doable and I'm going to prove that. Saw no one using temp and humidity sensors and act on fan and heat element accordingly.. also I have a box inside a box and the heating element uses water providing moister. I agree with you.. it's easier to have shoo box and light but that's a bit ugly to have in a living room.. I think they are beautiful to be on a exposición shelf or something like that. I bet I could even sell this peace of furniture to you. Hahahhaha
