Ya it's a cool trick. Just cut the ones you want off. And notice his video, the plates are elevated on a rack so the cling wrap goes past the bottom one.

Thanks for the reply, with my set up should I be worried about misting and air echanges? Or only after 100 percent colonisation?

Keep in mind as well that when you cut away however many plates that you need the bottom plate will need to be supported or the bottom will fall off, obviously ruining said plate.

It's no problem. Just some spores that dropped since you were a little late to harvest. No harm done though. Just makes things a little messier

Any piece will work. If you want to make sure you have it just cut it into two or three pieces and put each on its own plate. Pins/fruits inside a clean dish should be clean inside and out. I've rarely ever seen an issue and in fact sometimes I like to wait till fruits form and throw whole fruits/clusters into LC.

Seems like the cap would have spores, so yer essentially going back to MS. 
I just put the tiniest piece... But fruit trumps a pin for this reason RR picks a clone
