What do you guys do about oyster spores? I've been wanting to grow oysters I ended up with a sporeless culture in a trade but the culture just didn't work out now I'm sitting on a sporeworks elm oyster lc and I keep talking myself out of it. I think I'm going to buy or build a shed and set it up for fruiting oysters idk.

I think his main point was it's feasible. I think one of the first things caps was doing was taking them to restaurants to sell and grew from there. If you got your own place someday you could put them into the business.
I don't see why you couldn't move some at a farmer's market.

Yeah thats my bad i went on a little tangent lol
Im super happy for caps, dont get me wrong. And youre damn str8 lt, when we open our spot you can bet your ass well have some beautiful portobello and shitaake dishes.
My only gripe is, like i said, i feel as though the gourmet market is full. I mean, the restaurant i work at now doesnt have a problem getting mushrooms in, and they come from a massive distributor. I would just dissapoint myself if i tried to bust into that market.
But the farmers market? selling enough gourmet's to sustain my operation without outside funds (from my paycheck)? that sounds like someting i should be doing lol

I'm a farmer and am friends with a edible mushroom grower that does decent. There are some major hurdles you have to climb to do well. If you don't live in a region where mushrooms are a popular food option you'll spend your entire career being a salesman. Having to convince people that they are delicious and teach folks how to cook them. They absolutely do not sell themselves. But I'm from the southeast where tradition is king. Also, most edibles have a very short shelf life besides maybe shiitakes. You have to have them sold before they are ready. If selling to a restaurant or reseller it gets even more critical because they sit for a while at their business. And, hopefully there is no competition in your market. That just makes it that much harder. A lot of farmer's markets won't let you come and set up if there is already a mushroom tent.
But like any business venture, if you put your mind and time into it fully, there will be success.

This is what i was looking for. I actually didnt know all of that.
I know this sounds like something a fucking asshole would say but...
I know the owners of one of the oldest farmers markets in my town. I have a feeling they would be super down to let me set something up if it came to it.
It probably wont, i dont have enough time for my active operation as it is so idk where i would find the time to actually culture and work gourmets.

If your goal is to open a restaurant then I would recommend focusing on that goal and work on gourmet production to be able to supply your restaurant. Anything else isn't really what you want to do. Farm to table is pretty popular and perhaps having some vegan/vegetarian friendly dishes would also help you stand out. If you can source your ingredients, easily done if you produce them, and find a location then all you need is capital and employees. Loans are attainable if you have a good business plan.
If you wanna sell your mushrooms at the market, talk to the owner you know. If you wanna open a restaurant talk to the farmers market owner you know about sourcing produce. If you know FOH, BOH, and farmers you're on the right track. Live the dream. If the only thing holding you back is the time, you can always quit your day job. Like I said, you wouldn't be the first.
Personally I'd like to own a restaurant and help shape the menu, but I don't care for the stress of the kitchen. Growing produce for my own restaurant would be kinda cool.

It's from mishandling. And even light misting can cause bruising with hawaiians, hell it can cause aborts too.

Did they colonize well? I eye the shit outta colonizing jars cuz thats when im able to best spot contaminants. Once they all arian white like that i cant see shit unless it' severe.

First you grow the mushrooms then take them to chefs. It is a hard market cause there are gaint farms out west that supply the whole country with mushrooms at a fraction of what I would sell them for. but local is hot and commodity is not, so you market yourself as an artisanal product. Maybe your mushrooms cost more but they are a better product. Honestly tho if your trully trying to open a new spot that needs to be your foucus. I've opened 2 restaurants and both took all of my energy and attention for a year. Hell grow mushrooms and start drying them. Then you will have them to cook with. Run a wild mushroom soup at lunch and get top dollar for your work.

What does colonize well mean? They were all >30% colonized by 14 days, then I shook, then they finished in another 9 days.

Right now im focusing on capital, and i have a good amount saved...
But i will have to get a small business (or just business) loan to get that started. I've got a massive group of coworkers/managers/servers/cooks that i've met over the years and im pretty plugged into the service/booze industry in my town (not distilling or brewing but distribution).
My only issue is location. I get hungup on these kind's of things because, well... restaurants dont always do well. And if it does really not well then ill be upside down with employees to pay....
I guess what im saying is once i find a location, i have to find something that make my restaurant stand out. It may be the fact that you can go downstairs and look at the mushrooms that youre about to eat growing, or it could be that the food is spectacular.
My FOH and BOH positions have immensely impacted me and i just know that i could create jobs AND a solid spot within my community..
idk there's enough restaurants i guess is whats freaking me out about taking this loan...what if i fail?
I am a small business owner currently, employing 25 women at various nursing homes around town and my heart isnt in senior care anymore...
Also replyom those jars look fantastic and that speed is pretty much optimal, i dont think anyone could expect anything go faster. The rhizo looks moderate (which apparently is good) and i dont see any uncolonized grains. How many do you have there? get your winter spawn ready, take each of those qts to 1 case of qts. 3x12=36qt spawn minimum, and you would be spawning 34 of them because you should use one the recievers to expand even further.

Replyom - Cuz it seems easiest to spot stray mold/fungus contams when it's at that 72hr after shaking, and bacterial contamination at almost full to full colonization.

Thanks for the advice man! I have 5 of those jars. You would recommend transferring each quart into 12 more quarts?! Damn, I need to buy some more quart jars I guess...

I understand why you prefer to look earlier, I was just wondering what you meant by "Did they colonize well?" What specific things you look for other than no visible mold/bacteria.

Yeah honestly i would go 1:12, only because winter is coming and my midwestern ass has an innate urge to stock up on everything when it gets cold i didnt expect it to transfer to mycology but hey at least i always have spawn!!
If you were to take 3 of them to 36 qts, and spawn 2, you should have a rotation on your hands. 3qt to 36qt, allow to colonize, while you spawn the remaining 2 jars to a tub and grab a clone. Then by the time your clone is grown out and ready for grain you should be starting to spawn, especially with how fast this specific culture is moving.
The pics look amazing my dude, it looks like your pretty clear of bacteria even which isnt very common.
My only advice, besides doing a massive spawn expansion, would be to limit your tubs to 3qt spawn, in case any of them do something wierd. That 12 3qt mono's by the end of your spawn and you should pull AT LEAST 2 oz dry from each tub.
OBviously alot of people do really massive tubs but i really like doing 3qt spawn to one of those 27qt latching gasket sterilites that bod uses for unmodded, and i just take the gasket off and put the lid like normal. Usually have to flip it after the pinset is it because it's too wet.
