Fosho...that’s a long sit. I see delay in shit that’s a few weeks to month old. However, they typically wake right up as if nothing happened whenever they get going. I often notice that tomentose plates that have sat like that will produce nice strong and more ropey cultures once they get going.

I feel like stomach upset is always there, try tea. You do need to dry though just to keep them around. They're just crunchier, dehydrator works perfectly.

I met a dude who claimed the reason why mushrooms bother your stomach is lignin. Pretty sure he's quite mistaken.

Anyone have experience with storing fresh mushrooms in the fridge how long do they keep and what's the best way to do it just in a paper bag?

I'd use a box and cover with some paper (kraft or newspaper) and then a couple dish towels and a garbage bag over that. Edibles are good for 5-7 days like this and cubes should be fine for 2-3 days but I wouldn't go much longer.

As long as they don't rot they're good.
After eating mushrooms frequently my stomach starts producing a bunch of acid to help digest em and it get uncomfortable

They will for sure be fine that long. I regularly store mine for several days (yes even a week a number of times) and everything was just fine. I see no reason to think cubes don't store the same as other kinds mush. If you stay in the 2-3 day range you will for sure be good, but even up to a week has not thrown a wrench in anything ime.

They will also be losing potency the longer you store them exposed to air..Hence the shorter time frame for cubes.

Ah, that is an interesting point. I know that mush not properly dehydrated that either still retains, or has begun to take in moisture again will degrade in potency over time, but I was not aware this was a quantifiable/measurable concern in that space of time with fresh mush in refrigeration. I would love to brush up on that subject, would you possibly be able to shoot me a source/link to point me in the right direction?
I just prefer to run full loads through my dehydrators to prevent electrical waste so I store them in the fridge for a few (and admittedly a few times it was several days) until I have enough for a full dehydrator, but if this is a major concern/factor I will find religion for sure.
TIA

As far as i know potency loss and mothods of potency loss haven't been properly studied. All we have is anecdotal heresay

There have only been a few studies of potency degradation and none have been followed up last I heard.
There are a few things we can assume could be an issue though. Psilocin, the dephosphorylated version of psilocybin is pretty unstable in comparison and in ambient or above temperature atmosphere will degrade over time.
Dephosphorelating enzymes exist in mushroom cells for a variety of reasons including converting ATP into ADP to do work similar to what happens in your own cells, it’s also only active in water. So for unknown reasons, maybe cell rupture, these enzymes chill in a wet bath with your psilocybin, they will eventually eat some, convert it to psilocin and that will then further degrade when dried, losing you potency. Though this is all a hypothetical as there’s no evidence this is what’s happening, just that this is a potential issue around left damp shrooms.
(While alive mushrooms have an enzyme that will spend ATP to phosphorylate tryptamines it finds, so any accidentally converted psilocin will get turned back into the more stable psilocybin.)
