Straight razor sounds like an amazing idea... Also will do! I use a mandolin for cooking often and have a VERY healthy respect for exposed blades because of that fucker.

More than one tub of twist and pull is fucking a pain in the ass. Cutting harvest takes a couple minutes vs a half hour.
Any knife works. Better knives stay sharp longer. You can sharpen cheap dollar store knives.

I must be doing something horribly wrong here. Cutting took me about 15 min to do a shoebox the other night and left nasty stumps (I cut a tiny bit higher to try to avoid pulling up substrate). When I tried to just "saw" off a larger section (like 4"x4") I ended up tearing up the substrate like crazy, even with a stupid sharp knife.

I have good luck using a pair of scissors to harvest. You can get under the fat ones or clusters and cut away the substrate as it leans over. It works amazingly well some times and limits damage to the substrate.
I do go for the twist and pull first most of the time though.
I also use a chopstick to slide sidepin mushies up and out which also works really well. I haven't floated a substrate up and out of a tub yet but if I did it seems the scissor option would rock that shit down fast.

Iv left them in the fridge for months, I think the oldest culture I used was 6+ months. As long as they aren't contaminated before you put them in they should be fine.

I just did a quick sharpening of my scissors and it helps a lot! I do have a pretty badass knife I'm going to have to try now that I think about it...

Was gonna try the electric carving knife the other day. I had that sick feeling it would just grab the stumps and tear em out of the sub so I refrained from indulging my curiosity. Anyone try this approach?

Lol I that sounds like it would be gruesome. I happen to have a decent collection of high carbon Japanese knives that I can get razor sharp and some are very thin, should be amazing.

I sliced a watermelon with a ninjato once. The guy who owned the blade even held up the melon so i can get a good slice out of the middle

This might work well... I never understood the phrase "scary sharp" until this knife.

I'm not all that comfortable with it in the kitchen, I'm just not used to that style of blade. But I think it will slice some shroom stems with 0% effort!

I have a few Japanese blades mostly for my woodshop. You could lose a finger if you aren't careful. Crazy sharp.

How important is the 12/12 for mushies, is it ok if the light is on 24/7? If not I can move them just easier to have them where I already have a light on.
