[Pics] First grow log - Grow Big or Go Home - A journey to commercial farming

Hey everybody!
I've been meaning to get around to grow out a ton of mushrooms and am hoping that by creating this grow log, I can stay on track better. I'll have a whole slew of questions as I'm not formally trained, I've just learned from this website and YouTube and have had a few successful grows. I grew up farming and want to start an indoor urban farm in my city. I think starting with mushrooms will be my best route.
About my grow plan: In the future, I plan on creating a full scale grow operation of gourmet and medicinal mushrooms and have since grown out a lot of spawn that is now taking too much space in my refrigerator. I am going to grow in my apartment and want to maximize all the space that I can. If I can grow outside and get fruits that are sellable quality, that would be great. I don't have space for whole rooms. but I'm hoping I can use plastic bins and mini greenhouses and the spaces that are open in my apartment.
The spawn I have now (4qt bags of WBS spawn inoculated on these dates) - 13 bags total: Grey Dove Oyster - 4/2 Golden Oyster - 4/3 King Oyster - 5/15 Blue Oyster - 5/15 White Oyster - 5/15 Shiitake x 3 - 6/7 & 6/30 Reishi x 3 - 6/7 & 6/30 Maitake x 2 - 6/30
I would've had more bags but I lost some to contamination. The syringes were obviously contaminated. I sourced my culture from various places (field & forest and ebay vendors), and had some bad syringes.
About me: I caught to mushroom bug about 3 years ago and have taken the familiar route of journey as many others, starting with magical mushies (when I was younger, no longer into those) to now wanting to grow commercial gourmet and medicinal mushrooms. I've invested a lot and had a grow space this year, a cheap old office that unfortunately had plumbing leak and prevented me from getting started. But I'm determined to grow and so here I am, a man with 13 bags of spawn and ready to just grow. Any and all competent advice will be welcome and I hope to create an entertaining journey to inspire others just I have been.

Looks like you have enough spawn . The question is what about substrates? Even more obvious can you sell all these products?

I'm going to be using sawdust. I found a guy who can supply me huge grain bags worth of poplar and red oak shavings/sawdust. But for now I'm using hardwood pellets. I also hated using straw logs, but did have success cold pasteurizing with soap and wood ash. I'm trying to avoid a pressure cooker and have enjoyed not having to use it beside for the grain spawn. As far as selling these, I believe I will be able to from my own research.

Yes, what is your substrate medium and how are you preparing it? If those are 4 lb bags of spawn you could inoculate up to 1040 pounds at 5%. At 20% (extreme)you're still looking at 260 lbs of substrate.

Hardwood stove pellets, red oak and poplar sawdust/shavings. For the hardwood pellets I plan to just boil water and hydrate in filter patch bags to field capacity, let cool, then inoculate 2 cups per bag/ 1 cup per bag for shiitake.

Any recommendations on ratios between stove pellets, wheat bran, and gypsum in relation to the mushrooms (oysters, shiitake, resihi, maitake)? I've read I can use the same recipe for everything but shiitake which should be supplemented with half the amount of wheat bran.

I'm using 86% wood, 10% bran and 4% gyp. Some people use up to 20% bran. I gather that's a bit high. I'd be interested in hearing how the prep goes. It's a lot of boiling but if it's legit it might prove more efficient than pc'ing. I'm only able to fit 10 lbs of sub in my pc at a time.

[Update]
I decided to just start off with the king oyster and experiment to see how my method worked as far as contamination risk and spawn run.
2 @ 100% 2 @ 90% 2 @ 75% 1 @ 50% 1 Contaminated with green mold
I inoculated the bags with 2 cups of wbs spawn each on 8/1/16. I only used 2 cups because I thought that would use up the bag equally among 8 sawdust blocks, but I still have a good amount left over, I'm guessing enough to do 3 cups of spawn per block next time and that should use the whole bag of spawn.
I plan on fruting these in a martha stewart greenhouse soon. From what I've noticed from other people is that casing the bags with 50/50 sterilized vermiculite and peatmosss give the best results. I think I'll try that way, as well as to scrape the top of the sawdust block about 1/2 inch before casing which gives better pinning.

Actually what you see is hardwood pellets, that's not to say it couldn't be red oak, but the bag doesn't specify which type of hardwood it is.
In case you're or anyone else is interested, this is what the tulip poplar and red oak sawdust shavings look like that I'm getting. I haven't started using it as that will probably require a pressure cooker and I don't feel like using it yet.

I added 25% wheat bran and .25% gypsum to the sawdust pellets, mixed it up in the bags, adding boiling water and closed them up. Then I mixed them up well and placed them tightly in a plastic bin all night. I inoculated them in open air and just wiped everything down in alcohol before I got started, and wipe my hands in between bags. Nothing fancy, I'm trying to be as simple as possible. I'll save the fancy piece for the grow fruiting setup.

Keep us updated!
A few questions-
1: do you already have them in a GH? The don't need to be until you fruit. Which leads me to the big number two
2: spawning heavily- 1 bag grain spawn made 4 sawdust bags for me. Do you have a fruiting chamber big enough for all of these?!?
In any case- well done, and welcome to this amazing community. Glad you are on board - I went through the same transition, and it deepened and broadened my love for mycology- if you want a wedge of anything I've got let me know (see my journal).

Hey brother, I started my journey a year ago, pretty much for the same reasons. I'm urban farming and started my business from home, in a few years I'll hire a warehouse and expand but selling at markets and keeping my pace slow. This is important, keep your pace slow, do things slowly. Don't mass up produce all at once, get used to the tapering. If you do, remember you can always dry product you can't sell, so at least there's that.
Unless I'm reading this wrong, you inoculated that bag of Gold oyster in April, right? 5 months to grow that much spawn (If I didn't read wrong, sorry if I did) is much too long.
If you haven't already, buy RR's video Let's grow mushrooms and follow the grain spawn in that, using jars rather than bags.
Big tip I learnt: I can colonize 100 jars in one week due to increased airflow, it's more time consuming, more tedious, doing grainspawn in this fashion, but in one week I get full colonization of ALL my grain spawn. Get this, when I switched from that technique to the bag technique, doing exactly what you were doing, I had to wait over 2 or 3 months for bags to colonize. I think it's all down to airflow, I punch several holes in my jars and have tyvec as a filter and I think air gets in and out much easier and colonization is sped up due to internal CO2 not getting too high.
The bags are slow as hell, I learnt the hard way, it really impacted my business negatively using bags. I'm about to start my warm weather strains and am going back to using 100-200 jars for my grain spawn and I just swap them over.
So you need to get that grain spawn process quickened so you're not struggling.
Aside from that: right now you have alot of grain spawn. Use it sparingly, inoculating large bags doesn't require tons of spawn, I know you guys use pounds as measurement but for me, 1kg of grain spawn will allow me inoculate up to 70-100kg worth of substrate when used smart.
Mix gypsum in with your sawdust to increase yield. If growing pasteurized mushrooms always make sure to puncture the bottom to allow water to drain if it's overly saturated. Especially with sawdust, it holds water very well and can be heavy as fuck. So you might want to look into smaller diameter bags that are taller to increase surface area of the grow room since you have a small area such as myself to work with. I pasteurize in huge drums, it's tedious hard work but gets the job done.
Also, you can easily grow using only Hydrated lime. You do NOT need to heat pasteurize to be successful. Heat meant electricity bills that were way too high for me, so I just soak substrate in lime barrels for 20 hours. (No more due to changes in bacteria after 24 hours which begin to develop immunity to the PH swing and lime.
Lot's of info I know, but I really hope this helps you bro. From one farmer to another, always here to help out man! Peace!

I would disagree with you there buddy. Just get your field capacity right and that won't be an issues- plus, IME, it's best to keep pasteurized sub as clean as possible (i.e. Sealed in the bag) and you also don't want to introduce FAE to early/when it only needs GE.

I agree on getting the field capacity right, which I have with my formula. I based my formula off Stamet's sawdust recipe to get a 65-67% moisture, 5 lb block. The bags come out perfectly every single time (You gotta love math).

I agree with 65% water content or above, I don't like seeing lower. If your interested in more, paper pellets can hold 80%.

Yes I have them in a greenhouse in my bedroom, just because I need the rack space for the time being. I just leave everything ele sitting out on my table in my living room, spawn bags included. Nothing is super sterilized in my apartment, no HEPA filters, just alcohol rub-down when I'm about to work. I'm thinking the spawn run isn't affected by light for most mushrooms except the maiitake. They seem to need darkness, but I can't confirm but I want to look into this more. As far as space I'm looking for the most simple route again, so I'm thinking racks with wrapped in plastic, and I'm still working on humidity.

Hey bro
So the golden oyster has just been sitting for 5 months, it didn't take 5 months to fully colonize, only maybe like 10 days,it was really fast and colonizes every inch of the bag in mycellium, super thick and fluffy, so agressive. I shot the bags with about 4cc's of liquid culture, and just let sit. I've had it in the fridge the past months. I don't have a problem with spawn run times at all actually, and everything just sits out in my living room. Simplicity is key, jars require too much work, bags are easy and double as my fruiting container.
I haven't tried hydrated lime, but I did try wood ash and soap with straw, which did work actually surprisingly well with pink oysters. The only problem was I may have made my logs too wet as I ended with with lots of mold and fungal gnats heavily infecting my logs to the point where they were dropping out of the holes I punch every few seconds. I stopped using straw after that and switched back to sawdust as it's cleaner and easier to deal with. I hate dealing with wet straw, the sawdust is easy, just put pellets in the bags with wheat bran, pour boiling water in the bags, close up bags, you're done.

I've read that about Maitake as well but it seemed counter intuitive to me, in my experience 12 on 12 off met or beat general colonization times. The next run I do I will run 1 grain spawn bag dark and 1 12 on 12 off, and do the same once spawned, to see if I can put a pin in this once and for all.

I'm not sure if my living room light is strong enough for the mycellium to sense, but if so then they are close to a 12/12 light cycle. Sunlight peaks through the blinds too and hits the bags.

Little confused, are you growing in 100% dark? Or still 12/12 light and dark?

I'm working on the mini greenhouse right now. The local hydro shop is going out of business, so everything was 40% off. I got this atmosphere controller and t5 light at a great price, plus a couple cool mists from savers at an even greater price, and an ultrasonic humidifier at the best price. I also have a grow tent that can fit the mini greenhouse inside and some 4" fans and ducting.

I work all day so I want to create something simple, yet automated and worry free. I've had problems with flies before so I was thinking of setting the the greenhouse inside of the grow tent, pushing air into the grow tent with the 4" fans (maybe with a screen over the inlet to block flies) and then setting the humidifiers in the grow tent between the walls of the outside of the greenhouse and inside of the grow tent. I could pipe in air from the outside the greenhouse, but yet it would still be coming from a sealed space (grow tent).
I was thinking the fresh air being pumped into the grow tent would create positive pressure and air in fresh air exchange when it came to the greenhouse environment. I got the atmosphere controller so I could use that tweak the humidifier, fans, lights, etc.
How does this sound?

Sounds pretty good! Check out My Greenhouse Build for some comparison. A little bit different but may give you some ideas.

Thanks it was a good thread to read, I like the advice Gr0wer gives. I'm rereading what it says in The mushroom cultivar, and feel like what I have planned fits with what is written in there. I plan too much sometimes and should just get building but can't looking up more info to be 100% sure

That's a good setup. Wish I had the space for a few of those.

Hey man I noticed it's been a couple months since your last post in your build. How is it going by the way with your grow?

Your WL tek is interesting. I'm just curious if using newspaper strips could work or perhaps a way low labor/cost way to pelletize newspaper. I can source pretty much unlimited newspaper/office paper in my city for free. Plus wood shavings at cheap prices and in bulk. These two as a substrate would be awesome if it could deliver good enough results.

Check out some of my other recent posts. I currently have 4 bags of BSOY2 Oysters in fruiting. Maitake pinning. Enoki colonizing (using SloppyJoseph's Big Gulp Tek). Reishi's consolidating. Cordyceps contaminating (plays TAPS), and 1 012A Oyster consolidating. I have two BSOY2 grain spawn bags ready to go which will make 4 sawdust bags each.
