I'm not sure why you are storing it in the fridge or why you would have to wait to do so

Most store fresh plates at room temp and store grown out cultures in the fridge to keep them/ slow them down. That way if a contam got in the plate it will grow and you know not to use it.

Maybe your agar is too hot when poured, the fridge always causes the worst condensation for me. But to help prevent it with cultures a small cooler inside the fridge helps.

Still have condensation 2 days after pouring. Another question how long do you wait before inoculating

Any time you want, you can try the trick of setting a hot cup of water/coffee on a stack and it may go away. The only real issue IMO is condenation makes it hard to see in.

Some pro said that it needs to be in room temp for 3-7 days for any contamination (if) appear in the dishes. after 7 days if no contam appeared. then inoculate it.
In my experience it's best to inoculate with a live tissue. you will get ropey mycelium at the end which tends to grow and fruit better.

Condensation is due to a combination of moisture in the air and a temperature differential.  If you increase the temperature differential by putting it in the fridge, you will get more condensation, not less.

And this is a problem because...? I honestly do not know why people are concerned over condensation. I pay it no mind.

If you work with your plates upside down, which many ppl do, then it's even more of a non issue.
