How psi affects fermentation

My question is, if I'm fermenting in a closed vessel and the pressure rises 5psi? 10 psi? How is this affecting the fermentation process?
I don't recall where I read this but in industrial brewing vessels the internal pressure is 1.5 x atmospheric pressure, and this is beneficial to the brewing process, I think speeds it up if I recall.
I'm thinking more along the lines of fermenting vegetables right now, but perhaps beer later.
If I had a carboy with an airlock, I wonder what volume of water would you have to use in order to achieve 1.5 psi internally.

If the gas being emitted is CO2, the liquid will absorb some and become a little carbonated.

I'm not sure about that. I don't think the psi is really something to worry about imo, although I've only fermented veggies, milk kefir, and some wine so I'm not an expert on beer.

What prompted me to ask is... when I open a jar of fermenting veggies, the air pressure equalizes and a bunch of bubbles come out of solution. I just wonder if the water gets saturated with co2 and stalls the fermentation process. ?

I'm not an expert, but again, I wouldn't worry about it. It's good to burp the jars so that co2 doesn't build up, but I don't know of any other advantage.
If you haven't read it already, I'd recommend the book "The Art of Fermentation" by Sandor Katz. Just have fun with it.

Get a fermentation lock and rubber grommet, the air lock releases any excess gas that occurs during fermentation, the grommet is put into a hole drilled into the lid of your vessel so when you use the airlock you have a good seal. You can get them at brewery stores, either walk in or internet. There's other ways to form a seal that lets air out but IMO this is the best way to do it.

I would not expect any reasonable amount of pressure to stall fermentation, although I would be very careful and strongly advocate not fermenting in a sealed vessel as it could explode if the pressure exceeds the container's capacity to hold it.
