Oyster mushrooms pinning???

I have a few buckets of Phoenix oyster mushrooms going and I'm wondering they are getting ready to fruit. I have them in straw in 4 gallon buckets that have holes drilled in them. I have those inside another bucket (without holes) and am wondering if it's time to remove the outer bucket so they can fruit? Also, when it is time, should I remove the lid, or just let them grow from the holes only?

They look like they are ready to me, I would leave the lid on so they don't dry out or top fruit.

Awesome! Thank you! What do you see that makes you think they are ready? This is my first time growing these and I'm not seeing any pins (or what I'd describe as pins, although obviously I'm uncertain)  but it seems like the mycelium that is spreading out of the holes is thicker, not cobwebby at all which makes me wonder if they're trying to fruit but don't really have anywhere to go since they're inside another bucket????

The myc spreading out of the holes suggests they have colonized the straw and looking for more nutrients. The fresh air they will be getting from removing the outer bucket should initiate pinning.

They are fruiting now! Very encouraging thus far! I'm doing it outdoors in Oregon and we had a heat wave so I devised a little greenhouse of sorts. The attached picture is of the largest so far. More than half the holes have mushrooms growing out of them now!

Whoa, those look beefy!  Way to go!  I've got a straw block acting funny that I might put outside.  Looks like we might have a wet end of summer into fall.  Keep up the good work!

thanks! I'm really enjoying it. I did 2 types of pasteurization... Lime treated in one batch and heat pasteurized in the other. I'm making some interesting observations. The lime treated seems to have more pins and/or mushrooms per hole so I'm wondering how big they'll get. The heat pastereirized has 2-3 per hole on average where as the lime treated has 6-8?!?! I'm interested to see the difference this will make.

I started with 4 buckets total, all Phoenix variety. I did both sawdust and grain spawn. 1 bucket of each spawn type in each type of treated straw. Sawdust is slower, which I expected, but colonizing very nicely and I think should pin in the next week or so. 

I've been an avid mushroom hunter for years and am really enjoying trying my hand at cultivation. I'm profoundly interested in it and look forwards to experimenting further!

If there is a cavity at the top of the bucket that is to be expected. In my experience kings are especially bad for it, any slight gap between the substrate and the container and they will fruit like crazy in it.

Those on the top are stunted by lack of air exchange and won't get loads bigger even with the lid off, I would just pick them. If you're not using a fruiting chamber running humidifiers I wouldn't leave the lid off, straw dries out so fast.

Cool stuff!  The varied results from the two pasteurization procedures are interesting. May have something to do with the higher ph from the lime. I think I've read oysters like a higher ph.  The log I have acting funny shrank significantly while colonizing, leaving quite a gap between it and the bag.  It's fruiting now but not happily.  If it does anything crazy I'll throw up a pic.  Keep up the good work!

Good info! Thank you! I'm wanting to try and make spawn using cardboard and mushroom butts. Do you think that if I picked the ones growing on the top that I could use them for that or are they too stressed to use?

The spawn I purchased was pheonix, so thats what they should be.... ???

Did a quick Google search.... While the Phoenix & King look similar at this stage, they certainly do look more like kings right now? I'm going to continue to assume they are Phoenix, but hopefully will be able to tell more as they mature.

I'd harvest them, and the bottom ones probably soon too so they don't end up spongy.
