Left half substrate jars out overnight

Hey guys, So I was prepping 14 qt Coir/Verm substrate for pasteurization in qt jars and forgot to cover 7 of the jars waiting to be pasteurized in my pot overnight. Here are my questions:
1. I'm worried I might have lost important water content. Should I dehydrate them? If so, can someone give me a few guidelines to do so? I was thinking of adding little amounts of water and then giving it the squeeze test.
2. Should i be worried about contams event though i plan of doing the 2/3 boiling water method of pasteurization method for 2 hours?
3. I did not add any hydrated lime to my tek. The coir I'm using says it has a neutral to super low acid content on the package. Think I should be alright?
4. I also have been hearing a little about blood meal in the forums which I just happen to have a fair amount of from gardening. Should I add some and how much if so?

It's coir and verm. It's probably fine. You could dump it out and add more till field capacity if you were worried. You don't need to lime coir. In fact the only thing I lime is peat based casing layers. Don't mess with blood meal, it's good for plants, not so much for mushrooms. If I was determined to add nitrogen suppliment I would use worm castings or coffee at 5% total volume. But it's not needed.
If you are new to this just do the coir. By the way the beauty of coir and verm is they don't need proper pasteurization like everything else. You can just dump boiling water over it in a bucket and use it the next day. Hell you can even pressure cook it. Manure, nitrogen boosters, straw, etc all need careful pasteurization.
