FAE, blue oysters, selling at market

Right now my FAE is not perfectly optimal for my blue oysters. I unfortunately can't take pictures to show but there is a slight trumpet to them. I have seen pictures posted online of blues that it seems the trumpet size is fairly common though. They are not being grown outdoors, which I have done in the past which produced no trumpet shape. So I know the difference between no trumpet clusters and slightly trumpet shaped clusters. Are these clusters with slight trumpet shapes still highly marketable?

When I sell them do I need to break up the clusters? Or just pull the clusters off and only trim the straw off, weigh and sell maybe a few smaller clusters together by weight and of course the big clusters that weigh out right by themselves? Should I cut the smaller mushrooms off the clusters that don't produce big caps or just keep them on if they are not sad looking aborts? There is that big ball of mushroom mass in the center of the cluster how does everyone handle that for blue oysters?

People love the cluster look, depending on how you sell them you may need to break them up to meet your weight requirements, if you sell by half pound or quarter pound or what have you. but remember, you're a farmer. you dont need to sell washed and prepared food, thats for the chef to do, they prep their food. OR alternatively you could remove all that middle bit of the cluster and sell at a higher price.
