Roll in steam box build

So here is the concept drawing. Its a mix of my single drum steam sterilizer design and Drakes steam sheds using steel wire carts. The main advantage is i don't need to handle the bags as much, i can just cart them from station to station. It should be able to sterilize and cool the bags in about 1 day, and ill automate it of course. I should also be able to fit more bags than my 55 gal drum without spending a small fortune on a 85gal SS drum. Any input or critique is welcome at this early stage. This will not be under any pressure.

Good god don't turn your floor into a water tank! 6kw sauna steamers are $150 on ebay. Get 3 for a 4x8 enclosure. 2 for use and one for backup. Concrete floor, no drain. Steam comes in up top and exits at floor level. If you can weld that would be ideal for the box. I found bubble foil insulation to be adequate but 2" foam would work as well.

This enclosure will only be 2x4" for one rack. The reason i was thinking have the pan at the bottom is also for the condensate. Yes i can weld, I was just going to use the galvanized roofing material since its cheap and waterproof. My other idea was use an insulated 15 gal keg as a DIY boiler with an electric element, i already have 5 of em and would just need about $60 to wire the element and rig the pipes, and spares would just be a $15 element.

Did boiler is fine. Condensate should evaporate at cool down. I got no issues here.

I've been thinking of building something similar to this, with a main difference being that I would like one that is lightweight and mobile. Something I can break down and put in the back of my truck for on-site substrate prep. I'm planning to use stone wool insulation for my build which is something you may want to look into as well. A little more expensive, maybe harder to get, but its much higher melting point coupled with vapor permeability and low moisture sorption give it some advantages over xps in applications utilizing steam.

I know this is an old thread but I have been thinking of similar plans to this, wanted to check my thoughts.
What about using the same concept / design but using aluminum sheet (16-18 gauge) instead of stainless? Was thinking of insulating with ceramic fiber sheets, using wood or metal studs for the frame. Stick an oven door on it and call it a day. Thoughts?
How would one go about sealing edges / seams on the aluminum to prevent steam leak? Was thinking just plain high temp silicone & cover everything inside with high-heat tolerance marine paint.

Also what about galvanized, instead of stainless or aluminum? I know galvanized and aluminum can let off toxins, but it seems like a steam box wouldn't reach high enough temps for that. (Aren't the Presto PCs made of aluminum?)

Any thoughts on using aluminum or galvanized walls in a steam box, instead of stainless?
From what I've read on aluminum it does release toxins, but I couldn't find much aside from '380% more toxins when cooked at 400F' which is considerably higher temperature than a steam box.
For galvanized I found a quote saying "Zinc toxicity can occur when an individual is exposed to and breathes the heated yellowish fumes produced from welding or heating galvanized steel. For hot-dipped galvanized steel the recommended maximum temperature is 392 F (200 C), before the metal presents a toxicity risk." ... which is also considerably higher temp than a steam box.
