Here's the science behind using InstantPots and similar products for sterilization:

If you want an electric, commercially available pressure cooker, Zavor's 8 LUX LCD is one of the better ones to get on the market right now. You can fit 7 half pint jars in it.

I use an electric pressure cooker because I have extremely limited space and 15psi pressure cookers aren't easily available where I live. The various cooking programs on an electric cooker were also appealing to me (and they've served me well!)
I've had plenty of success by adding between 20 minutes and an hour of extra time to the pressure cooking time. I have also had contamination, but I'm quite certain that's down to flaws in my sterile technique rather than something that can be entirely pinned on the pressure cooker. I've experimented by leaving jars of pressure cooked grain out for over a week with no contamination appearing.
YMMV. Obviously there are "ideal" ways of doing things in this hobby and using a nice, big 15psi pressure cooker is one of those things. But I've seen lots of people preach that you're pretty much going to fail if you use anything below 15psi and that's not entirely honest. By the time I learnt my pressure cooker "wouldn't work", I was already successfully growing Cambodians from multi-spore inoculated WBS in a shoebox.

After you finish PC's your jars, how long did you wait to open the instant pot? they said you aren't supposed to force the steam out, so im wondering how long you waited until the jars were cool enough to be removed.
