The most important thing to prevent contams, in my opinion.

Removal of nutritious residue.

You should wipe down the rims of your jars VERY thoroughly, wipe in a circle, and then wipe downwards where your circle ends, with a different part of cloth. IMO this is the most important and time consuming part of preparing pf jars.

In casings, if there is anything nutritious in it, it will probably contam. You have a bit of sticky residue from crumbling cakes on your hands? This could give the contaminants what they need to germinate and grow on the casing layer. WASH your hands very thoroughly before handling the casing material.

Using regular peatmoss and vermiculite, casing material carefully kept free of any nutrition or possible residues has never gone bad for me. I've used casing material that had been pasteurized a month before, and kept in the fridge, covered by foil in a bowl.. the whole casing procedure was done open air, without any thought of sterility. -> No contams, but I was always careful not to let any rice, sugar, or mycelial residue get near it.. mold just doesn't grow on peatmoss and verm very easily.

Once I started paying more attention to this, I haven't had a single contamed casing or jar since.

I didnt wipe all my jars and they didnt contam, but who knows....
